Tomato and Spinach Bloops

These are an oldie but a goodie! I couldn’t get enough of them! You can always use vegan ‘cheese’ in place of the fresh mozzarella and it would still be just as delicious! 




Tomato and Spinach Bloops 

Ingredients: 

  • Tomatoes 
  • Balsamic vinegar 
  • 1 bag Baby spinach 
  • 2 tbsp Minced garlic
  • Fresh Mozzarella (or vegan ‘cheese’) 

Directions:

Marinate thick tomato slices in balsamic vinegar for 30 minutes. Then put on cookie sheet on 400 for 7 minutes. Add spinach that’s been sautéed with garlic, and fresh mozzarella and broil until cheese melts….holy delicious batman!
