This, folks, is vegetarian. And oh so delicious! This can be a nice side on a weekend, a football snack or a pot luck party dish!
I have always been obsessed with buffalo chicken dip but since becoming mostly vegan/vegetarian, I needed something to fulfill my cravings! Oh yeah, and I hate tofu or any soy products.
- Head of Cauliflower
- 1/2 red onion chopped
- 1 packet dry ranch mix
- 1/2 c Parmesan Romano
- 1 c sour cream
- 1 block cream cheese
- 3/4 c buffalo sauce
- Preheat to 400 degrees F
- Roast chopped cauliflower and onion for about 35-40 mins
- While that’s roasting, roughly mix cream cheese, sour cream, ranch mix, buffalo sauce and half of the Parmesan Romano cheese together
- Add cauliflower and onion to buffalo mixture.
- Then pour into an oven safe dish and top with remaining Parmesan Romano cheese and bake until warm all the way through. Or you could pop it in a crock pot and leave on warm for a party
