
Have you ever made a S’mores with a Peep?!

Yeah, me either, but it sounds delicious! I use marshmallow fluff in this s’mores cheesecake recipe to bring the peeps flavor for Easter!

And then lots of Easter Sprinkles from Amazon to go with the peeps!

The sprinkle set came with little Easter bunny and Easter chick sprinkles which fit the Easter peep dessert theme perfectly! Espresso spoons are also from Amazon.

Pro tip: use a Measuring cup to help form the graham cracker crust on your cheesecake. These Gold ones are from Amazon.

I just use a butter knife to create a fun swirl on the peeps s’mores cheesecake.

This Gold flatware set is from Amazon and is my new obsession! It’s such a cheap way to feel fancy for the Easter holiday!

I had this random dark chocolate Easter bunny so I used this for my chocolate ganache for the s’mores cheesecake. You would most likely need 2 Easter bunnies for this but I only had one so I used dark chocolate chips for the rest. I’ve recently discovered though, like how they put something on shredded to keep them separate in the bag, they do the same for chocolate chips! So when making ganache, it’s better to use a bar of chocolate and chop it than chocolate chips so it’s smoother.

Also, don’t over bake your s’mores cheesecake because then you’ll get a huge crack in it like I did. But just like in life, there’s always a solution. Luckily in this case, I was planning on covering it with chocolate ganache anyways for the s’mores vibe!

And then you can decorate your s’mores cheesecake however you see fit! Use all of your creativity because it’s fun to create edible art!

I used Cadbury mini eggs too because I had some leftover from my Moist Carrot Cupcakes recipe and they’re honestly my most favorite Easter candy of all time!

Cadbury eggs with the goo inside is aggressive. But the mini eggs, baby, yes! That is the way to my heart!

Ok let’s get to baking this decadent peeps s’mores cheesecake for your Easter dessert tablescape!
Ingredients:
Graham Cracker Crust
- 2 cups crushed graham crackers
- 2 tbsp light brown sugar
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup melted butter
Cheesecake Filling
- 4 – 8oz pkgs cream cheeee, softened
- 1/2 cup light brown sugar
- 1/2 cup marshmallow fluff
- 1/4 cup plain nonfat Greek yogurt
- 1 tsp vanilla extract
- 4 eggs
- Yellow & pink food coloring (optional)
Chocolate Ganache
- 1 cup chopped dark chocolate
- 1 cup heavy cream
Decoration Ideas (optional)
- Peeps of all colors
- Cadbury mini eggs
- Easter Sprinkles
- Crushed Graham Crackers
- Other Easter candy that you love
Directions:
- Preheat oven to 325°F
- Mix together the graham cracker crust ingredients and use a 9.5” spring form pan to make your s’mores cheesecake crust. Then bake for 10 minutes and let cool while you make the peeps cheesecake filling
- Cream the cream cheeses together in a stand mixer, stopping to scrape down the sides, until smooth, using a paddle attachment
- Add the brown sugar, marshmallow fluff and vanilla extract and mix until smooth
- Add the eggs 1 at a time and then the Greek yogurt
- Split the cheesecake batter in two so that you can color them the colors of the peeps you chose for your decoration (I wish I knew they had purple peeps before this, I would’ve added that vibe too! The peep possibilities are endless!) I did just a little yellow and pink so it was a pastel peep vibe for Easter but you live your life…just remember, you can always add more but you can’t take it away
- Then spoon each color, alternatively, into your cooled graham cracker crust and gently swirl with a butter knife…be sure not to go all the way to the crust and then bake for 50 minutes until just set.
- Then turn your oven off, but keep the s’mores cheesecake inside the oven. We want to gently bring the temperature down so hopefully yours doesn’t crack like mine did. Then use a wooden spoon to prop open the oven to slowly release the heat. After about an hour, you can transfer your s’mores cheesecake to a cooling rack. Be sure to let it come to room temperature completely before covering it and putting it in the fridge to set
- Once your peeps cheesecake is set, you can make the ganache by heating the heavy cream on the stove and then pouring it over your dark chocolate. Cover and it hang out for 5 minutes, then whisk it together. This is my favorite part, watching the ganache come together…it always looks like nothing is gonna happen and then right before your eyes you have a glorious luscious chocolate ganache to top your s’mores cheesecake
- Pour the ganache on top of your cheesecake and decorate so that your peeps can be adhered in the ganache and let set in the fridge
- Enjoy!
