Shrimp Pot Pie Recipe (Low Sodium)

Today is a snow day on the east coast so I needed some comfort food for my husband shoveling all the snow! What better way to celebrate a snow day than with snowflake and snowmen pie pieces for our pot pie?!

I wanted to use this wild caught low sodium shrimp I got from target instead of chicken like a typical pot pie. And because shrimp cooks quickly, I decided to make this a deconstructed pot pie so that we didn’t have to put the shrimp in the oven for the entire time it would take to bake the pie crust. Plus these pie crust snowflakes and snowmen are adorable.

The products I used to make this shrimp pot pie were from Amazon. I highly recommend a bamboo rolling pin and a bench scraper to help with a homemade pie dough, but you could certainly use premade pie dough too.

I used the Pie crust recipe from my Walnut Pie.

Except I did throw everything in the food processor for a few pulses until it just came together instead of doing it by hand because…snow day!

These snowflake and snowmen cookie cutters came in a Christmas pack. I think I’m going to make another pot pie for Valentine’s Day and use these heart shaped cookie cutters. Wouldn’t that be super romantic for a warm and comforting Valentine’s Day dinner?

I added a little plain unsweetened almond milk using my espresso measuring cup to the egg for the egg wash.

Everyone judges my tiny gold whisk but I feel like it comes in handy all the time for things like an egg wash! It’s so cute for my neurodivergent mind!

I use the wild caught shrimp from Target because it has only 150mg sodium per 4oz compared to 530mg for the farm raised. It’s something I wouldn’t have thought of and makes such a difference, so I wanted to share.

I love this vital 7 organic mushroom extract powder by Ellie’s best when it comes to all things food! Highly recommend! I put it in my coffee too for those nutrients!

Frozen mixed veg are the way to go for an easy snow day pot pit but feel free to use whatever veg you want. I do let mine thaw out some first though.

Ingredients:

  • Pie crust
  • 1 egg + 2 tbsp unsweetened plain almond milk (egg wash)
  • 16oz wild caught shrimp
  • Garlic powder, onion powder, mushroom powder, black pepper, cumin, chili powder, parsley flakes
  • 12oz frozen mixed veg, thawed
  • 10.5 oz can unsalted cream of mushroom soup
  • 1/3 cup plain nonfat Greek yogurt
  • 2 tbsp cream cheese

Directions:

  1. Roll out pie dough and cut into shapes using cookie cutters and place on a parchment lined baking sheet. Poke with a fork, then pop in the freezer while you preheat your oven to 425°F and prepare your egg wash
  2. Egg wash the pie dough and bake in the oven for about 20 mins, turning the trays halfway through until golden brown
  3. Add a little olive oil to the cast iron pan and add shrimp with 1/2 tsp garlic powder, onion powder, mushroom powder, black pepper, cumin and chili powder. Cook halfway then add in the thawed mixed veg for a minute
  4. Add in the cream of mushroom, Greek yogurt, cream cheese and 1/2 tsp each (or to taste) garlic powder, onion powder, mushroom powder and black pepper plus 2 tsp parsley flakes
  5. Once everything heats up and is melty and bubbly, it’s time to serve it up in a bowl with some pie crusts on the side or on top
  6. Enjoy!

This shrimp pot pie was rather easy to throw together on this snow day and was the perfect comfort food dinner to warm up my husband after shoveling all the snow!

Look, that’s him. That’s my husband, he turned into a snowman from being in the snow all day.
