Irish Apple Cake – Zero Sugar Added

I got some free apples by accident from Walmart curbside so I decided I would make this lovely Irish apple cake! Obviously apples have natural sugars but I used Splenda magic baker to make it without any added sugars for a healthier St. Patrick’s Day dessert option!

Side note: I love this Glass Bowls Set from Amazon because after you add lemon juice to your sliced apples to keep them from oxidizing, you can use just pop the airtight lid on and off to go! Less dishes!

This is like an apple pie but way better in my opinion! A layer of cake, some delicious cooked apples and a crispy brown streusel on top!

Traditionally you would make a custard sauce to pour over the Irish apple cake but I’m going for easy here, so I drizzled this delicious sugar free caramel sauce on top and it was everything I wanted it to be!

It’s delicious on its own, almost like a light breakfast vibe but that caramel sauce makes it a lovely dessert treat for an elevated adult St. Patrick’s day treat!

I also used the Splenda Magic Baker line for my zero sugar added replacements. They work great for baking with everything I’ve tried thus far, even cheesecake!

I’ve also been digging on this Digital Hand Mixer from Amazon for little things like this so I don’t have to pull out the stand mixer. She’s heavy!

A cookie scooper is super helpful for the cake part because it is a thiccc batter so that it can withhold the weight of the apples.

I got mine from Amazon, it was part of a scooper set.

Ingredients:

Cake

  • 1/2 cup unsalted butter, softened
  • 1/2 cup Splenda magic baker
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 1/4 cup heavy cream
  • 1 1/4 cup flour
  • 1 tsp each baking powder and cinnamon
  • 1/4 tsp salt

Apple Layer

  • 4 apples, peeled and sliced thin
  • Lemon juice

Streusel Topping

  • 1/4 cup each Splenda magic baker & brown sugar Splenda magic baker
  • 1/4 cup old fashioned rolled oats
  • 3/4 cup flour
  • 6 tbsp unsalted butter, cold

Directions:

1. Preheat oven to 350°F and grease a 9” springform pan

2. Peel and slice apples thinly, then toss in lemon juice and set aside in the fridge

3. Make the streusel by combining all of the ingredients together in a crumbly mixture and set aside in the fridge

4. Combine the flour, baking powder, cinnamon and salt in a bowl and set aside

5. In a large bowl, cream together the butter and Splenda magic baker with the vanilla extract for a few minutes

6. Then add one egg at a time, be sure to scrape down the sides of the bowl

7. Add half of the dry flour mixture and the heavy cream and mix

8. Switch to a spatula or spoon and hand mix in the rest of the dry flour mixture and spoon into your pan and spread evenly.

9. Top cake mix with apples in an even layer, then top with the streusel mixture

10. Bake for 50-55 minutes or until golden brown and let cool a few minutes before removing the spring form. Serve however your heart desires, but I highly recommend sugar free caramel drizzle
