Chocolate Chip Cookie Stuffed Cinnamon Rolls Recipe

My friend Alecia made these simple chocolate chip cookie stuffed cinnamon rolls for the Super Bowl and I knew I needed to make them immediately!

I mean, how could you not?! Thank you Alecia! I also decided to make the cinnamon rolls in the shape of shamrocks for an Easy St. Patrick’s Day treat! I also found it fairly simply to stuff the chocolate chip cookie dough into the cinnamon rolls and she had mentioned doing it in a regular roll was quite tricky.

You for sure can make your own cinnamon rolls and chocolate chip cookie dough but this is not that recipe. This is an easy throw together sweet treat for breakfast or dessert!

First you gotta unroll your cinnamon rolls. Make sure you get Pillsbury Grands because the regular cinnamon rolls are really just biscuit shaped.

Then you can roughly shape them into shamrocks for St. Patrick’s Day! I did most of them as regular clovers but one special four leaf clover for funsies. Someone got lucky!

And then shove your break and bake chocolate chip cookie dough into the center of your shamrock cinnamon rolls!

Bake these cute shamrock cinnamon rolls in a preheated 350°F oven for about 20 minutes, give or take. My current oven temp seems to be kind of low so definitely keep an eye on them until they’re golden brown!

While your cinnamon rolls are baking, you can add a little green food coloring to the icing that comes in the tube of cinnamon rolls. Or you could skip this part and they’d still be cute, especially if you use St. Patrick’s Day Sprinkles from Amazon!

I put the cinnamon roll icing it in a disposable piping bag from Amazon for ease but you can certainly just spread it on with a knife.

Then I just tie the open end and snip just the tip off the corner. You could also use a ziploc baggie too! But putting it in the cup helps fill it easier!

Look at those Sprinkles! I love them! They’re so cute!

I let my shamrock cinnamon rolls stuffed with chocolate chip cookies cool a bit before piping the St. Patrick’s Day icing so it doesn’t completely melt in and become invisible or even more messy than it’s already going to be.

Then we can add our Sprinkles!

Can we also talk about the super cute Espresso spoons from Amazon that make me feel like a fancy Instagram girlie?!

I put a few extra chocolate chips in the middle of the cinnamon rolls where the chocolate chip cookie is, that way it gives even more of a decadent chocolate chip cookie vibe. CHOCOLATE!

And there you have it folks! Fun for the whole family for St. Patrick’s Day or a random weeknight because TREAT YO SELF!
