Not Your Mama’s Tuna Noodle Casserole (Low Sodium)

Tuna Noodle Casserole was a staple for dinner in my house growing up but it always lacked flavor. So I decided to jazz it up with seasonings and vegetables while getting rid of a ton of that unneeded sodium! First I’m going to share some of my favorite products and the process of this dinner recipe.

I started this tuna recipe with sautéing some onion and peppers with my wooden spatula from Amazon. All the other products linked in this dinner recipe will be from Amazon. You can use any pepper you want, I just happened to have some multi colored sweet peppers in my fridge.

You don’t have to use a blender for your vegetables. The texture of them would be nice, but since I’m still recovering from dental surgery, I can’t have too much texture. It’s also a great way to hide them from the kiddos while still incorporating a ton of flavor.

I love these metal bowls to prep my ingredients because they are lightweight, durable and come in a set of multiple sizes.

I used a base of cream of mushroom soup, which is classic, but I chose the unsalted one because the sodium is outrageous. Even if you decide to add salt, it would be better to add your own high quality salt so you can determine how much you’re adding. I use these silicone spatulas to get every bit out of the can.

The silicone spatulas are heat resistant and also came with in a set. I love this little tiny one for getting ingredients out of my measuring cups and spoons, like this plain non fat Greek yogurt. You can certainly use sour cream but who doesn’t love more protein and less fat?

I also used plain unsweetened almond milk in my espresso measuring glass that makes me feel like a scientist. Again, you can use regular milk of your choosing, but this was a healthier option that I already have on hand.

I love these clear organizer bins for my spices to easily pull out of the cabinet. This smaller one has my main spices and then I have a larger one with all the other random spices. I use these pink metal measuring spoons lately because they’re so durable!

This mushroom powder really provides extra depth of flavor with the tuna and veg for a deeply delicious delight. I use the starkest no salt added tuna because you can just get it from Walmart and is one of the cheapest low sodium tuna cans I’ve ever found.

I use my rotary cheese grater for shredded Swiss cheese because it melts better fresh, but also I’ve never seen shredded Swiss cheese at the grocery store. I prefer Swiss because it’s only 50mg sodium per serving, as opposed to 200mg for cheddar. If you want more texture, some crushed up hint of salt ritz would be lovely on top of your tuna noodle casserole.

Normally tuna noodle casserole has peas in it but I chose french style green beans so I could eat them easier but peas would also be good. Del Monte has no salt added can of green beans. This ceramic casserole dish makes this casserole have a more appealing presentation than just a metal 13×9.

I love using these white ramekins as regular bowls and/or prepping my ingredients. I use them a lot for heating up leftovers in the air fryer too.

This gold flatware makes me feel fancy at a fraction of the cost.

Ingredients:

  • 1 onion, chopped
  • 1 pepper (or 5-6 sweet peppers), chopped
  • 4oz cream cheese, softened
  • 1 can unsalted cream of mushroom soup
  • 1/4 cup plain non fat Greek yogurt
  • 1/4 cup plain unsweetened almond milk
  • 1 tsp Dijon mustard
  • 1 tsp mushroom powder, onion powder, garlic powder, black pepper
  • 1 tbsp dried parsley flakes
  • 14.5oz can no salt added French style green beans, drained
  • 3 cans no salt added tuna, drained
  • 12oz bag of egg noodles, cooked al dente
  • 6oz shredded Swiss cheese

Directions:

  1. Preheat oven to 400°F
  2. Sauté onion and peppers, then blend
  3. Add blended onion and peppers in a large bowl with the cream cheese, cream of mushroom soup, Greek yogurt, almond milk, Dijon and spices.
  4. Add tuna and break it up a bit with a fork as you mix it
  5. Add green beans and cooked egg noodles
  6. Add the mixture to a casserole dish and sprinkle with cheese
  7. Bake 20-25 minutes until cheese is melty
  8. Enjoy!
