Apple pie filling is my husband’s favorite and it’s something that is super easy to make. It’s a very forgiving recipe and can easily be adjusted for your own personal taste. It’s also a recipe that can be used for pretty much any dessert, not just apple pie.

It can be used for traditional apple pies, for these fun mountain pies on the fire when camping, on the top of cheesecake, in puff pastry pockets for McDonald’s apple pie vibes, on top of cheese danishes before they’re baked, on top of French toast, pancakes or waffles, the list goes on.

Ingredients:
- 4 apples (I prefer Granny Smith but you can use what apples you have on hand)
- 3 tbsp unsalted butter (you can use salted, it would be nice with the sweetness, I’m just watching my sodium intake)
- 1/2 cup granulated sugar (or brown sugar for a richer flavor for autumn)
- 2 tsp cinnamon (or 1 tsp cinnamon + 1 tsp pumpkin pie spice for a warmer autumnal flavor)
- 1 lemon juice (add zest too if you have the time)
- 1/4 cup water
- Cornstarch slurry (2 tbsp water + 2 tbsp corn starch)

Add apples and butter to a large pot on medium heat, melt the butter

Then add sugar

And spices

And lemon juice

And water

Stir and cover with lid, cooking until they’re just starting to soften (about 5-8 mins)

While that’s happening, start the cornstarch slurry

Mix cornstarch

And water

Mix

And add to cooked apples

Stir constantly, as it turns from this

to this, fairly quickly

I keep it in these deli containers after it cools if I’m not using it right away, like when we went camping to make apple mountain pies.

The French toast or brown sugar cinnamon swirl bread from Pepperidge farm is perfect for these camping style apple pies.

Have you ever had a mountain pie? What do you call them? I’ve heard them called so many different things over the years.

I love dusting these mini apple pies with powdered sugar using a flour duster.

And I use my homemade chantilly cream, or as we call it, whipped cream vibes, to go with the apple pies.

I have a version I used in these eclairs. And a thicker version using mascarpone that I used for frosting cakes.

You can’t really go wrong with apple pie filling. And it’s so easy to make instead of buying the canned version.

Be sure to watch my video too for more details.

I used this same apple pie filling recipe but cut the apples smaller and did the brown sugar to make these McDonald’s apple pie copy cat recipe using store bought puff pastry and a huge scoop of vanilla ice cream.

I also made this homemade apple pie filling to go with focaccia for an iced apple cinnamon apple focaccia vibes!

And a apple pie filling cheese danish type vibe, these didn’t puff unfortunately, I have a hard time with Trader Joe’s puff pastry so I don’t know that I’d use it again but the apple pie filling well made up for the disappointing puff pastry!
