Strawberry Brownie (Crumbl Cookie Copycat Recipe)

Crumbl cookie came out with a Strawberry Brownie this week and it looked like everything I wanted. Let’s make it at home so it’s more delicious and MUCH cheaper! Crumbl cookie is charging $4.99 plus $1.49 (that’s $6.48!) for the strawberry brownie. Each one of these homemade strawberry brownies is less than $1! You can’t even get something at the dollar tree for a dollar anymore!

I just used a regular ol box brownie mix for this recipe because brownies can be finicky to make from scratch and the box mix is just as good, in my opinion. The trick is to bake them just a little less so they’re more fudgey in the middle. Crumbl cookie said they infused their strawberry brownie mix with freeze dried strawberries but that’s dumb, add chocolate chips instead. I used both dark and milk chocolate chips for a more complex chocolatey flavor.

This brownie pan from Amazon is the best for something like this because it makes perfectly sized individual brownies. I love the edge of the brownies so much, so this gives you more of that texture. I recommend using a cookie scoop to easily transfer your brownie batter to your brownie pan.

Once the brownies have cooled, it’s time to make the strawberry cream cheese frosting.

Strawberry Cream Cheese Frosting Recipe:

Ingredients:

  • 1 stick of butter, softened
  • 8oz pkg cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 28g bag of freeze dried strawberries, blended into a powder
  • 1/2 tsp vanilla extract & almond extract

Directions:

  1. Using an electric mixer, beat the butter and cream cheese together for a couple minutes until fluffy
  2. Add the powdered sugar and extracts and mix until incorporated
  3. Add the freeze dried strawberry powder and mix until incorporated

I thought it would be prettier to use a piping bag & star tip to pipe the strawberry cream cheese frosting onto the brownies for a more elegant homemade dessert.

Add some sliced strawberries.

And then I melted some white chocolate in a silicone cup in the microwave and put it in a piping bag to make the white chocolate drizzle as pretty as can be.

These crumbl cookie strawberry brownies are pretty flippin easy to make at home!

They’re delicious, cheaper, I didn’t have to leave my house and it was fun! I highly recommend picking up baking as a hobby for the new year in 2026.
