
I love tomatoes. I love tomato pie. But sometimes ya gotta switch it up a bit, so here’s a version I threw together the other night with pimentos!
Ingredients:
- 4 tomatoes
- Pie dough
- 1/2 red onion, diced
- A bunch of green onion, chopped
- 2 tbsp minced garlic
- 4oz jar of diced pimentos, drained
- 1 tsp onion powder and black pepper
- 1/2 cup mayo
- 1 tbsp Dijon mustard
- Shredded cheese (I used a mixture of cheddar and pepper jack but you can just use whatever is on hand)
Directions:
- Preheat oven to 400°F
- Slice tomatoes and lay evenly on paper towels to dry a bit, make sure to put more paper towels on top and gently press out some extra moisture before using them
- Mix together mayo, garlic, onion, pimentos, onion powder, garlic powder and about 1/2 cup cheese in a bowl and set aside
- Place pie crust in pie pan and poke with a fork for extra ventilation, then brush the Dijon over the whole inside
- Place green onions in an even layer on the bottom of the pie, then stack your tomatoes leaving a little space for the mayo mixture and add that
- Sprinkle with more cheese and bake until bubbly, about 30 minutes
- Let rest before cutting and enjoy!
