
Y’all watch Big Brother? Halfway through last season, I watched it for the first time! I started by clicking on the live feeds because I kept hearing everyone talking about it. It was a random week day morning…

And Blue started making chilaquiles. As everyone started waking up and gathering in the kitchen, they all pitched in to make this delicious big breakfast and I was hooked! Not only on Big Brother but CHILAQUILES!

And then I think of Gilmore Girls and I just keep yelling Chilaquiles back and forth with my husband!
There are so many sides and toppings you can use with this basic recipe but you can do whatever your heart desires!

But I’ll show you how to make a quick low sodium guacamole and crema to top your delicious chilaquiles con huevos! I’ve been obsessed with this Glass Bowl Set from Amazon!

The Glass bowls come with locking lids too so I don’t have to waste another bowl or cling wrap to put in the fridge.

These super cute Gold Measuring Spoons from Amazon are also a fancy touch to my kitchen for super inexpensive!

The liquid measuring cup (beaker) is also from Amazon and is 2 cups which makes it pretty much the only one I need and makes me feel like a scientist when I cook.

You can certainly use flour tortillas to make your chilaquiles but since we’re not using salt, the flavor of the corn tortilla is much more complex and appetizing. It also makes these chilaquiles con huevo gluten free and vegetarian too!

Let’s get to cooking!
Ingredients:
Salsa Roja
- 1 red onion
- 1 red pepper
- 1 jalapeño (without seeds if you don’t like spicy)
- 5 Roma tomatoes
- 3 tbsp minced garlic
- 1/2 tsp each chili powder and cumin
- 1 cup unsalted vegetable broth
Guacamole
- 3 avocados
- Juice of 1 lime
- 1/2 tsp Black pepper and garlic powder (or to taste)
Crema:
- 1/2 cup sour cream
- 1/2 cup heavy cream
- Juice of 1 lime
Other Ingredients & Toppings Options:
- 8 corn tortillas
- Fried egg
- Pico de gallo
- Corn
- Easy Crockpot Beans
- Cotija
- Lime
- Green onion
Directions:
- Preheat oven to 400°F
- Cut tortillas into 6 triangles and place on a greased baking sheet and spray with cooking spray. Bake for about 10 minutes, flipping halfway
- While those are baking, go ahead and use a blender and mix blend all of the salsa roja ingredients and then pour into a large skillet and bring to a simmer
- Now mash your avocados with seasonings and lime juice and place in the fridge to chill
- Whisk together the crema ingredients and place in the fridge to chill
- Once your sauce has thickened and your baked tortilla chips have cooled and crisped up more, add them to the sauce just to warm them back up. You want them wet not soggy. You can also fry your egg at this point too if you’re adding that, which I highly recommend
- Plate your chilaquiles and add your sides and toppings! Don’t forget that fresh homemade guacamole and crema drizzle too!
