Moist Carrot Cupcakes w/ Carrot Cake Pops Easter Bunny

My husband loves carrot cake. With Easter just around the corner, it’s the perfect time for carrot cake! But let’s make carrot cupcakes for some Easter potluck and family gatherings!

I found these super cute Easter bunny buns chocolate molds from the dollar tree. So I figured I would use up more of my holiday chocolate candy melts and make carrot cake pops in the shape of Easter bunny buns for Easter!

Easter, bunny, carrots, sweets, cupcakes, cake pops, what more could you want?? I also showed three other ways you can decorate your moist carrot cupcakes if you want to forego the carrot cake pops. Some sprinkles, Cadbury mini eggs or even just some cake crumbs will give your moist carrot cupcakes the extra touch for your Easter party!

Before I get into this moist carrot cupcake recipe with cream cheese frosting, let me share a few tools with you that I got from Amazon that could be helpful to have in your repertoire, like this Rotary Cheese Grater. It works easily on these carrots and I’ve also tried potatoes and cheese and both did great!

This Cookie/Cupcake Scoop Set from Amazon is what I use to make similar sized cupcakes for even baking!

The Gold Measuring Spoons/Cups I use are also from Amazon and are also part of a set!

It’s a cheap way to feel fancy!

Same with this super cool science-y 2 cup beaker from Amazon.

Oh and these cute little Espresso spoons are so elegant! The Easter sprinkles are also from Amazon and come with a few different varieties that I used for all of my Easter recipes this season!

All of the Piping Bags/Tips are from Amazon and came as part of a set! I use these all the time for savory cooking too sometimes!

Pro tip: put your piping bag in a cup so it’s way easier to fill with icing! Keeps the outside of the bag and your hands clean!

The Rainbow Cupcake Liners came in a set from Amazon too…I just realized how many things I buy that come in a set!

Pro tip: if you mix cake directly after coming out of the oven, you don’t need icing to make cake pops! The steam from the hot cake creates moisture that helps bind the cake!

You for sure don’t need a Kitchenaid Stand Mixer from Amazon for this recipe, but if you’re into baking and don’t already have one, it’s a great tool to have that pays for itself over and over again!

Ok let’s get to baking some carrot cupcakes!

Ingredients:

Carrot Cupcakes

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 3 eggs
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 cup vegetable oil
  • 1 cup crushed pineapple from a can
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)

Cream Cheese Frosting

  • 8oz pkg cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tsp vanilla extract
  • 3 cups powdered sugar

Directions:

  1. Preheat oven to 350°F
  2. Whisk together the dry ingredients (the first 5 on the list), and set aside
  3. In a large bowl, whisk together the eggs, sugars, extract and oil
  4. Add the crushed pineapple and carrots and mix
  5. Fold in the dry mixture, half at a time
  6. Scoop into lined cupcake pans and bake for about 25 minutes, or until a toothpick comes out clean
  7. If making carrot cake pops, immediately mix 3-4 cupcakes in your Kitchenaid with the paddle attachment and then let cool with the rest of the carrot cupcakes
  8. For the cream cheese frosting, cream the cream cheese, butter and vanilla together and then slowly add the powdered sugar until a beautiful frosting forms. If it is too dry, you can always add a little heavy cream to thin it out more, but that’ll really depend on the humidity in your location. You can put it in the fridge to firm up a bit before piping too
  9. If making carrot cake pops, paint your mold with chocolate or candy melts and let harden, then smash carrot cake into the molds and then cover with more chocolate or candy melts, maybe some sprinkles too for funsies and let harden before trying to remove them from the chocolate candy mold
  10. Once your moist carrot cupcakes have cooled, you can frost them and decorate them festive for Easter! This is a great time to get creative and please do share with me if you make them, on my social media!

I wanted to show you the undecorated carrot cupcakes too because they still look stunning! So don’t feel like you have to go overboard either. Sometimes simplicity is just as nice!

I just love Cadbury mini eggs and use every excuse I can to buy them for Easter so I can eat them all!
