Grilled Harissa Chicken Taquitos Recipe

I was at Trader Joe’s getting Brioche Buns for my Salsa Burgers Recipe and as I perusing the spice aisle, I came across this Harissa Paste. Sitting at only 50 mg sodium per tsp, it is on the lower end of a condiment/sauce/paste so I knew immediately that I wanted to try it on some grilled chicken and then just needed to come up with a recipe to go along with it!

I had a plethora of corn tortillas leftover too, so this Chicken Taquito Recipe just made sense! Speaking of corn tortillas, y’all that has been my go to these days for a low sodium diet. They’re only 20mg of sodium per corn tortilla compared to 150-250mg of sodium per small flour tortillas, depending on the brand. The corn tortillas are also only like 4 bucks for 80 tortillas! Y’all, what?!

I also love to use plain nonfat greek yogurt in place of sour cream for a low sodium option. The cool thing too for someone like me that doesn’t eat a ton of meat and am always looking for ways to get more protein, the greek yogurt has a ton, so its also more beneficial than sour cream in general. If you find it to be too thick, you can add some lime juice and make it a crema!

Since I make my recipes no salt added, another hack I like to use is Ellie’s Best Vital 7 Organic Mushroom Extract Powder, from amazon, for more umami but also again, the nutrients, baby! I like when I can multi-task my ingredients!

Also, these gold measuring spoons came with a set on amazon, same with the gold flatware. The cat oven mitts are also from amazon. The cat dish towels were a present so I can’t help there, but the hello bloom plates are from the dollar tree! Did you hear the dollar tree is going to start charging up to $7 for items?! Baby, what?! Let’s take this as a lesson not to sell ourselves short of our worth cuz honey the dollar tree knows her worth!

You certainly don’t have to grill your chicken, heck you could even use plant based chicken replacement in this recipe to make it a vegetarian recipe. Or just omit the chicken in your taquitos completely if you’re on a budget and just want a little snacky snack.

But if you’re going to grill your chicken because that cooking method is superior in my opinion, here are my tools for cooking on the grill in the hot summer heat. First, get yourself an apron with pockets, the pockets are important. I got this plus size cherry apron from amazon. Amazon is also where I got this portable rechargeable pink fan. This pink fan is superior to all other portable fans, periodt. I have tested a lot of them! My body struggles to regulate heat and now I am almost 40, so, this fan literally saves my life and all the other portable fans I have bought and tested did NOT have the wind power that this fan has! Ok, so put the fan in your apron pocket and tilt the head so it blows towards you face.

Then get yourself a javasok, either one for your starbucks iced coffee or your can of polar grapefruit seltzer water or both cuz lets be honest, were drinks girlies. Then your cold drinks will stay cold and you’ll stay hydrated and energized while cooking next to an open flame! Typically, when we cook chicken, we grill the whole pack but then just use one chicken breast per meal to split. But just like you can omit the chicken, you can also use all the chickens for your taquitos, This would be especially helpful if you’re a larger family or are using this recipe for a potluck or game day snacks.

I also typically shred my cheese for two reasons. The first being that frequently cheese shreds are coated with an anti caking powder substance to keep the shreds from sticking together. Whilst this may be helpful for packaging and shipping shredded cheese, it can make it impossible to melt shredded cheese sometimes, especially finely shredded. I also have yet to find a blend of shredded cheese that is pepper jack cheese and an extra sharp cheddar cheese. That is my go to blend, y’all! Highly recommend! I also highly recommend shredding your own cheese using a rotary cheese grater! It’s so fun too. I’ve used it on carrots and potatoes and it works like buttah! This one is from amazon.

But again, you can use the cheese you have on hand or the cheese you prefer. You could even use a plant based cheese if you’re feeling crazy!

Grilled Harissa Chicken

Ingredients:

  • 1 lb chicken breasts
  • 3 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tsp each garlic powder, onion powder, paprika, cumin
  • 1/2 tsp each mushroom powder and black pepper

Directions:

  1. In a ziploc bag, add the harissa, oil and seasonings and mix together
  2. Add you chicken and close the bag and then mix around making sure the chicken is completely coated and let set in the fridge for 15-20 minutes while you preheat your grill and clean up cuz that is super important when cooking with raw meat
  3. Grill your chicken on a medium flame for about 5 minutes each, depending on how thick your chicken breasts are. I like to butterfly my chicken so it is thinner and cooks faster but if you have a chicken breast that is a big thick daddy, you’re going to want to cook it a little longer until the middle temperature has reached at least 165 degrees Fahrenheit, or if you’re like me, until you cut open the middle of one of them and it isn’t pink
  4. Let grilled chicken rest before cutting to maintain its moisture

Grilled Harissa Chicken Taquitos

Ingredients:

  • 4 oz cream cheese
  • 2 tbsp harissa paste
  • 1/2 red onion, diced
  • 1/2 green pepper, diced
  • 1/4 cup no salt added black beans, drained and rinsed
  • 1/4 cup no salt added corn, drained and rinsed
  • 1/2 cup shredded cheese of your choosing
  • 1 of you beautifully grilled harissa chicken breasts, chopped small
  • 15-18 corn tortillas

Directions:

  1. Preheat oven to 450 degrees Fahrenheit
  2. Microwave cream cheese for about 20 seconds until it so much more soft and easier to work with and then add to mixing bowl (if you have a microwavable mixing bowl, you can just start with your cream cheese in there to microwave it, then less dishes, win!)
  3. Add the rest of your ingredients (except the tortillas) and mix together
  4. Microwave 3-4 tortillas at a time for about 30 seconds until more pliable and easier to work with or else they are going to crack as you try to roll them up
  5. Fill each with a large spoonful of filling and roll up and place on a greased baking sheet then
  6. Once all of your taquitos are rolled and on the baking sheet, make sure there is space between each one for even cooking and spray with more cooking spray on top
  7. Bake for about 15-20 minutes, flipping the taquitos halfway
  8. Enjoy!

I served mine with some fresh limes squeezed on top, sliced avocado, plain nonfat greek yogurt and not shown but my new favorite thing ever is Heartbeat’s Habanero Hot Sauce from Heatonist.com!
