Easy 4 Ingredient Low Sugar Protein Muffins Recipe (Lemon Blueberry & Chocolate Covered Strawberry)

These muffins are so easy to make and perfect for a quick summer breakfast or dessert snack!

I’ll share some of my favorite Amazon products too. I use all of these products every day to bake delicious treats and cook incredibly dinners.

There are so many customizable options for this same basic protein muffin recipe, so start using your imagination!

I use Pillsbury zero sugar cake mix line but any cake mix will do, even the gluten free kind if you need. I used core power protein shake and ratio protein yogurt because they were the highest protein I could find but feel free to use whatever you have on hand.

I recommend these metal bowls, they’re very lightweight and come in a set of a bunch of sizes. It makes life easier when meal prepping too.

Pro tip: toss some of the cake mix into the blueberries before making your muffin batter, that way when you add the bloobs at the end, they suspend in the batter better than sinking to the bottom of the muffins while baking.

For the lemon blueberry protein muffins, I used a zester to zest the yellow part of my lemon skin.

Then I juiced the lemons into a mesh strainer so it catches the seeds.

I love these white ramekins for making the recipe accessories.

Like mixing an egg with a little gold whisk before adding it to our protein muffin batter.

Save some of the lemon zest and juice for the icing if you’re adding that at the end.

Using a hand whisk keeps from overmixing your protein muffins.

And then just use a silicone spatula to fold in the blueberries.

I use a large cookie scoop to scoop the protein muffin batter but you can certainly use a 1/4 measuring cup too. Make sure your pan is greased, regardless.

I used this monkfruit powdered sweetner for my lemon blueberry icing. You can use regular powdered sugar too. I also really like this one from swerve too.

You can use a little heavy whipping cream or milk or your choosing if you didn’t save enough lemon juice. I used about a tbsp extra using my pink measuring spoon.

I just used melted chocolate for the top of the chocolate covered strawberry protein muffins. The super dark Ghirardelli is my fave chocolate ever! Ghirardelli also has a no sugar added chocolate chip variety too. Either way, I use these Disposable piping bags for the chocolate and the lemon glaze because I hate cleaning piping bags. These are inexpensive and make life so much easier.

Another pro tip is putting your piping bag in a glass to hold it open while you fill it is one of my favorite secrets that shouldn’t be a secret!

Lemon Blueberry Protein Muffins

Ingredients:

  • Zero sugar yellow cake mix
  • 14oz vanilla protein shake
  • 5.3oz protein yogurt
  • 1 egg
  • 2 lemons
  • 1 1/2 cup blueberries
  • powdered sweetner
  • heavy cream

Directions:

  1. Preheat oven to 325°F
  2. Zest and juice the lemons
  3. Toss blueberries in a spoonful of the dry cake mix
  4. Whisk the egg and add it to the cake mix with the protein shake, protein yogurt and 3/4 of the zest and juice from the lemons
  5. Fold in the blueberries and scoop into greased muffin tins (makes about 21)
  6. Bake according to cake mix package directions or until a toothpick comes out clean
  7. Once cooled, whisk together the rest of the lemon juice and zest with about 1/4 cup powdered sweetner. Add extra heavy cream to thin it out into a glaze and either pipe or drizzle the muffins with the lemon glaze
  8. Enjoy!

Chocolate Covered Strawberry Protein Muffins

Ingredients:

  • Zero sugar devil’s food cake mix
  • 14oz chocolate protein shake
  • 5.3oz strawberry protein yogurt
  • 1 egg
  • 2 tbsp water
  • Freeze dried strawberries, smashed or pulsed in a food processor
  • Dark Chocolate

Directions:

  1. Preheat oven to 325°F
  2. Whisk the egg and add to the cake mix, protein shake, protein yogurt, water and 3/4 of the freeze dried strawberries
  3. Scoop batter into greased muffin tins (makes about 21)
  4. Bake according to cake mix directions or until toothpick comes out clean
  5. Once cooled, melt the chocolate and drizzle on the muffins and sprinkle the rest of the freeze dried strawberries on top before the chocolate sets
  6. Enjoy!

They are beautiful!

I love love LOVE chocolate but I surprisingly like the lemon blueberry muffins over the chocolate covered strawberry muffins.

I ate them both though!
