Easy Summer Berry Pie Filling Recipe

My favorite dessert to make when camping are dessert mountain pies.

Growing up we would just use canned pie filling and regular ol wonder bread. And whilst those were delicious, we’re 40 now, it’s time to elevate our dessert mountain pies!

First, I changed the bread to these swirl breads. Pepperidge farm and Thomas have some delicious varieties. Over the week vacation, we tried this French toast bread, cinnamon bread and brown sugar bread. There wasn’t one we didn’t like!

Then I made some easy homemade pie fillings for our dessert mountain pies. This summer berry pie filling I’m going to share with you today was incredible! You can make it ahead of time to take with you or if you stay in a cabin like us, we made it on the stove to share with everyone the first night we were there.

I brought bags of ingredients for light packing but figured I would label them so if I got pulled over there would be no question what’s in this bag!

I eyeballed this specific summer berry pie filling because I didn’t want to measure anything but I will give you the measurements I was going for. Moral of the story, it’s hard to mess it up.

I added about 3 tbsp water with 3 tbsp cornstarch. I love these colorful solo cups from Amazon for the summer.

Mixed it and set it aside.

You can use whatever berries you like, but this combination was not something I see very often and worked beautifully! I did strawberries, raspberries and black berries, a container of each. I halved most of the raspberries and blackberries and kept some whole and then cut the strawberries in different sizes. I like having some big chunks for texture when eating.

I added about 1/2 cup granulated sugar to my summer berries.

About a tsp cinnamon.

And the juice of a lemon. It would be delicious if you add zest too but I didn’t bring a zester thingy.

Give it a stir and cook on medium for about 5-8 minutes until some of the fruit starts to break down.

Then add your cornstarch slurry.

Bring to a boil while stirring constantly until it thickens to a jelly like consistency.

It happens fast, like a minute or two and you’re done. Then just turn off the heat and let it hang out.

Once it’s cooled, you can store the summer berry pie filling in these deli containers. You can use it as a pie filling for an actual pie, make these mountain pies, top some ice cream or cheesecake with it, or oh maybe even like homemade pop tarts with puff pastry or pie dough.

In this case, we put it in pie irons from Amazon.

And made these dessert mountain pies on the campfire.

Once the bread it toasty, you’re good! Also, this grill caddy was the best present from my bestie! It has a paper towel holder and lots of pockets and is insulated too. It was an easy way to carry stuff from inside the cabin to the fire and to my family’s cabins too!

I brought my flour duster so I could add some powdered sugar on top of the summer berry dessert mountain pies.

They’re so pretty! I also added some ‘whipped cream vibes’ to the plate to go along with the summer berry mountain pies.

These summer berry dessert mountain pies were such a big hit with the fam, even my brother who rarely eats anything dessert was obsessed!

I made an apple pie filling too and he had a dessert mountain pie with half summer berry and half apple pie filling…dare I say he’s a genius?!

Ingredients:

  • 16oz container strawberries
  • 6oz container blackberries
  • 6oz container raspberries
  • 3 tbsp corn starch + 3 tbsp water
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • 1 lemon

Directions:

  1. Mix cornstarch and water together to make a slurry and set aside
  2. Add sugar, cinnamon and lemon to the berries and cook on medium 5-8 mins
  3. Add slurry and bring to a boil, 1-2 minutes
  4. Cool and enjoy!
