Easy Vegan Lo Mein

Vegetables on vegetables! My boyfriend is obsessed with lo mein and I hate spending money on take out. So, we came up with this super healthy vegan lo mein! Did I mention it easy really easy too? 


Ingredients:

  • 1 spaghetti squash 
  • 1 bag cole slaw mix
  • 1 onion 
  • Soy sauce 
  • EVOO

Directions:

  1. Start by cooking your spaghetti squash. I like to cut it in half, scoop out the seeds and rub some EVOO and garlic on it. You can do whatever you want to lubricate and season it. You don’t want it to dry out so you need some sort of oil or grease on it. Then I cook it on a cookie sheet, skin side down on 400 for about forty minutes ish.
  2. While the squash is cooking, in a wok or big frying pan, sauté onions and cole slaw mix in some EVOO for about 15-20 minutes. 
  3. When the spaghetti squash is done, you then use a fork to shred the squash and get it out of the skin. Then add that to your pan with your cole slaw and onions. Then add as much soy sauce as you’d like for your taste and sauté for another few minutes until everything has married together. 
  4. You can add shrimp or chicken if you’re into that sort of thing.
