Savory Apple Pasta (Vegan)

Just hear me out

Apple and sausage go together, right? Why not vegan sausage? Why not pasta? Why not???

  • 1 pkg impossible savory breakfast sausage
  • 1 box farfalle (bow tie pasta)
  • 1 stick country crock plant based butter
  • 4 yellow onions, chopped
  • 2 apples, peeled and chopped
  • 1 tsp each salt, pepper and red pepper flakes
  • 2-3 tbsp minced garlic
  • 1 cup vegetable stock
  • 1 cup follow your heart Parmesan
  • Fresh parsley


  1. In a large pot, brown the sausage and then remove from pot and set aside
  2. In the same pot, add the butter and once melted, add the onions, apples and seasonings. Cook down for about 30 minutes until they become a rich light brown color and then add the garlic
  3. Add veggie stock and scrape bits off the bottom of the pot while the stock reduces down, about 5 mins
  4. Save 1 cup pasta water when preparing the noods
  5. Once the veggie stock has reduced, add the noodles and half the pasta water. If it still looks too dry and not shiny, add the rest of the pasta water
  6. Add back the sausage, half the Parmesan and some fresh parsley. Save the rest as garnish on top
  7. Enjoy!
