
Tis the season for all the zucchini recipes! This is just a throw together easy weeknight dinner side vibe so feel free to switch up to your liking!

Ingredients:
- 2 medium zucchini, chopped
- 1 red onion, chopped
- 1 tsp garlic powder, onion powder and black pepper
- 1 tbsp corn starch
- 1/2 cup heavy cream
- 1 cup shredded cheese (you can use whatever, I used a bit of sharp cheddar and Pepper jack)
- Splash of olive oil
Directions:
- Sauté onion and zucchini in an oven safe pan with a splash of olive oil and the seasonings until no water is left from the veggies
- Add the corn starch and stir, then add the heavy cream and stir
- Sprinkle cheese on top and then bake at 400°F until cheese is melty and bubbly
- Enjoy!
