Halloween Themed Eclair Cake – Sugar Free Dessert Recipe

I love no bake eclair cake! It is super easy to throw together and everyone loves it! I recently made a sugar free eclair cake using some super cool zero sugar products and it turned out amazing! So I figured why not try it with a Halloween vibe!

A spoooky spiderweb was made using Pillsbury Zero Sugar Frosting from amazon.

You just put the vanilla in a piping bag from amazon or a ziploc baggie and make a swirl for the spiderweb. It’s actually really easy to do for such a fun look!

I also used these Maria Cookies from amazon but I think I’ve seen them in my local grocery store too, so whichever way you can find them. There’s a few other brands of sugar free digestive biscuits on amazon too if there’s a different one you’re interested in using.

Ingredients:

  • 2 pkgs sugar free instant vanilla pudding mix
  • 3 cups cold milk
  • Orange food coloring
  • 8oz zero sugar cool whip
  • Sugar free Maria cookies
  • Zero sugar chocolate and vanilla frosting

Directions:

  1. Whisk together the instant pudding and milk until thickened and then add orange food coloring, you’ll want it darker than you think because you’ll fold in the cool whip next
  2. Fold in the cool whip
  3. In a 13×9, put an even layer of Maria cookies and then half of the pudding mixture
  4. Add another layer of cookies and then the rest of the pudding mixture and finish with another layer of Maria cookies
  5. Let set in the fridge for about 30 minutes
  6. Melt the chocolate frosting in the microwave for about 30 seconds and spread on top
  7. Melt about 1/4 cup of the vanilla frosting in the microwave and put into a piping bag and make a spiral on your cake, then use a skewer from the middle and drag outwards to make a fun spiderweb design
  8. Let cake chill in the fridge for another 4 hours or overnight
  9. Enjoy!

I also got these super cool Halloween wax paper sheets from amazon that I use for sandwiches and what not for my husbands work lunches but they’re super cool for backgrounds too apparently!
