

One of my favorite fall recipes is a One Pot Pumpkin Pasta dish I used to make when I was full on vegan. I still make it! I was trying to think of a way to make that but with potatoes. That was the vibe I was going for and I ended up with this creamy pumpkin potato soup and I love it! The fam jam ate it up too which is always a win in my book!


Ingredients:
- 1 red onion, chopped
- 1 head of broccoli, chopped in florets
- 2 lbs red potatoes, in small cubes
- 4 cups vegetable broth
- 2 cups water
- 1/2 bag baby spinach, roughly chopped
- 1 tsp each black pepper, paprika and onion powder
- 2 tbsp minced garlic
- 1-2 tbsp sriracha
- 15oz can of pumpkin purée
- 1/4 cup unsalted butter
- 8oz pkg cream cheese
- 1-2 cups shredded cheese
Directions:
- In a large pot, sauté onion then add the broccoli, potatoes, vegetable broth and just enough water to cover the potatoes by about half an inch
- Cover and boil until potatoes start to become tender, then add seasonings and reduce heat
- Add the pumpkin and spinach and then the butter and cream cheese and cheese
- Once everything is melded together like a beautiful soup, eat it however your heart desires! I added some hint of salt ritz and green onion on mine
