
Y’all know how much the texture of mushrooms messes with my neurospicy brain but man I really could use the health benefits!

Enter Ellie’s Best incredibly delicious and highly concentrated Vital 7 Organic Mushroom Powder from amazon!

I’ve been digging it in my morning coffee lately too!
I used my fave veg and any leftovers I had to make this creamy vegetarian vegetable roast and that mushroom powder really brought home that umami flavor a plant based meal needs!
Recipe:
Ingredients:
1 cup vegetable broth
2 1/2 lbs potatoes
1 head of broccoli
1 red onion
2 peppers (I used whatever was on sale but green, red, orange, pick your fave, ya know what I mean)
1 tsp each vital 7 mushroom powder, garlic powder, onion powder, paprika, black pepper
1/2 tsp red pepper chili flakes
1/2 cup sour cream
1/2 cup heavy cream
1 cup shredded cheddar
Directions:
1. Preheat oven to 450°F
2. Cut all the veg and put into a 13×9, then add all the spices and vegetable broth
3. Bake for about an hour, stirring halfway through, add a little more vegetable broth if needed
4. Then add the sour cream, heavy cream and cheddar and bake for another 15 minutes
5. Serve however your heart desires! I like to put it on some spinach and tomatoes, maybe cucumber, just lighter fresher veg to break up the richness and get more nutrients cuz like healt..But also you can just eat it straight up cuz holy yum! It’s great next to a plant based or regular meat too
