Elote Corn Quesadilla Hearts

It’s almost Valentine’s Day so I wanted to make these delicious elote quesadillas in the shape of a heart! Feel free to make them as regular elote quesadillas too!

I used these metal Cookie Cutters from Amazon to make the quesadillas into heart shapes!

I find the metal cookie cutters make a cleaner cut mark for your fun foods!

You can use any kind of tortillas for your quesadillas but I like corn because they have way less sodium and have a better flavor profile. Now that we have our heart tortillas ready for the quesadillas, let’s make the cheesy elote corn filling using cotija cheese!

Add 1 cup of corn and 1 diced jalapeño to a pan and sauté with a little oil and some seasonings. I used 1/2 tsp each of chili powder, cumin and Organic Mushroom Powder from Ellie’s Best on Amazon.

Some of y’all who have followed Midnight Munchies & More for awhile will remember Ellie’s Best Bigger Better Nut Milk Bags that I use all the time! I use them for oat milk a lot but also cold brew, juicing, etc.

Well they make this Vital 7 Organic Mushroom Extract Powder from Amazon too and it’s right there next to my typical garlic powder, onion powder, black pepper seasoning mix that I use for literally everything! It’s a great way to stay low sodium without sacrificing flavor but more importantly, its health benefits are supreme because it’s 7 different mushrooms, y’all!

Ok so once the elote corn mixture has cooled, add 1/3 cup cotija and 1 cup shredded pepperjack cheeses.

I like to prep my elote quesadillas ahead of time before cooking so that I’m not running around the kitchen like a mad woman so I don’t burn them. It just makes the actual cooking process less stressful and more fun!

A little Pamela on each side for a few minutes and voila!

You can top your elote corn quesadillas with whatever your heart desires but I had a ton of leftover stuff from making chilaquiles the other day that I used for this recipe too. I’ll be posting the chilaquiles recipe soon! You can Follow me on my socials too so you know when it drops!

I used my Easy Crockpot Beans because it makes a ton and they’re so delicious! It’s my favorite way to make dry beans that have next to no sodium which is a huge plus too! I also used some pico de gallo and a homemade crema on my quesadillas.

I made some heart shaped nachos on the side, as well because what else are we doing here? And the tortillas I buy come in like an 80 pack for $4 so I need to use them up! That recipe is coming soon too but of course I used Mushroom Powder from Amazon as one of the seasonings because it just has so many positive health benefits and gives extra umami flavor to everything! I’m obsessed!

My husband loved the elote corn quesadillas!

We just made a few for dinner so we have extra elote corn filling left and are going add more beans to it and roll it up in tortillas to make taquitos for the Super Bowl this weekend too!
