Easy Cheesecake Pudding Cups for Valentine’s Day (Low Sugar)

Valentine’s Day can be a holiday filled with way too much sugar. For someone like me, focused on trying to eat better with my husband, I was looking for a low sugar dessert to celebrate this love filled holiday.

These easy cheesecake pudding cups were just the thing we needed! Let me show you the products I used, some tips to make them even better for you and how I made them extra festive for a comforting Valentine’s Day dessert vibe.

I love Jello-O’s zero sugar pudding mixes. If you don’t like cheesecake, you can always grab the vanilla ones and they will work just as well. I almost used a chocolate pudding mix too but I really like how these pudding cups turned out.

I used Ellie’s Best Beet Root Powder for a natural food coloring on the bottom layer of the cheesecake pudding mix.

I used my mini gold whisk from Amazon to mix the powder with the pudding mix before adding my almond milk.

You read that right, I used plain unsweetened almond milk in this cheesecake pudding recipe. You can use any nondairy milk of your choosing but when you do, the trick is to use less. Just use a pink measuring cup for 1 1/4 cups almond milk instead of the 2 cups of regular milk that it says to use on the pudding mix box.

Give it a good whisk. I love this big pink whisk from Amazon. All products linked will be from there too.

The metal bowls I use come in a set which is perfect for a recipe like this so you don’t have to keep stopping and clean out your bowl for the next layer.

I used a cookie scoop to try and make my life easier when pudding the cheesecake pudding into each cup.

I am currently obsessed with this strawberry whipped cream from Target. If you want to keep it a completely dairy free recipe, feel free to use a nondairy whipped cream. If you want to make it even more low sugar, use zero sugar whipped cream. Easy peasy!

I added some Valentine’s Day Sprinkles on top for a festive look but these can certainly be omitted. The sprinkles on the pink cutting board come in the same sprinkle set.

Sometimes I use gold espresso spoons to eat with too because it makes food last longer. It’s like using a smaller plate for meal time so it seems like you’re eating a lot more. It’s my favorite healthy eating hack that’s an easy thing to do.

That’s literally it! I just used some cute glasses I already have but if you want to make these for a Valentine’s Day party at school or for kids or something, I highly recommend these plastic cups with lids . I used them for Halloween, here’s what they look like to give you an idea.
