Antipasto Salad Phyllo Bites

I wanted to make antipasto salad appetizers after seeing the Fourth of July antipasto salad drama on TikTok.

I started the antipasto salad appetizer tower with these antipasto salad phyllo bites.

I just got these phyllo shells from Walmart. They’re already fully baked, so you just crisp them up in the oven for a couple of minutes.

I made a quick creamy whipped pesto vibes to go inside my antipasto salad phyllo bites. You can just use ricotta but I decided to use cottage cheese instead for some extra protein. I did about 8oz cottage cheese, 2-3oz softened cream cheese and a couple tablespoons pesto to my ninja blender.

Then you just spoon the creamy pesto into the bottom of the phyllo bites.

Then you can add your antipasto salad toppings of preference. Literally whatever your heart desires. We chose no olives because we don’t like them but you better believe I had the marinated artichokes, peppers of all kinds, mozzarella balls, pepperoni, salami and cherry tomatoes.

I recommend cutting everything smaller so that you can fit a variety of antipasti in your little phyllo bites.

I used this vibey 3 tier porcelain stand from Amazon to display all of my antipasto salad appetizers.

I put the antipasto salad phyllo bites on top of my tower.

They’re absolutely delicious! Everything you want in an antipasto salad in one bite with a little extra textural crisp from the phyllo cups. Amazing!
