Candy Corn Shortbread Cookies Recipe

Confession: I hate candy corn the candy! But I just think they’re so cute and festive for the fall Halloween season! Dang That’s Sweet made these cute little shortbread cookies that look like candy corn and they’re super easy to make!

I used a food scale from Amazon for accuracy, which I highly recommend for baking as often as you can! If you don’t have Prime yet, you can get a 30 day free trial here.

You’ll need a loaf pan and time to plan ahead. Which, I happen to love because then I can just make them the day before and forget about it until tomorrow. A few hours will suffice too if you’re in a crunch.

Parchment paper is also essential so that you can pull the cookie dough out from the loaf pan after it’s chilled.

Then you just slice the dough easily because it’s harder once chilled.

Then you cut little triangle candy corns! How freaking cute?! I can’t take it!

I would recommend popping the tray in the freezer for a few minutes while the oven preheats. Keeping them nice and cold helps them maintain their cute little candy corn shapes!

Ingredients:

  • 2 sticks unsalted butter (226 grams), softened
  • 200 grams granulated sugar (1 cup)
  • 1 egg, room temp
  • 1 tbsp vanilla extract
  • 365 grams all purpose flour (3 cups)
  • 1/2 tsp baking soda
  • yellow & orange gel food coloring

Directions:

  1. In a stand mixer with the paddle attachment, beat the butter and sugar together until it lightens in color and becomes more fluffy, this takes a few minutes
  2. Add the egg and vanilla extract and beat a couple more minutes
  3. Then add the flour and mix until just incorporated, be careful not to over mix
  4. Separate the cookie dough in bowls and use gel food coloring to color a third of the dough orange and a third of the dough yellow, leaving one plain
  5. Layer the doughs into a loaf pan that has been lined with parchment paper so that you can wrap it up and leave it in the fridge for a few hours or preferably overnight
  6. Then when your dough is chilled and hard, lift the parchment paper up and the cookie dough will come out with it, unwrap it and slice into roughly 1/3 of inch slices
  7. Then cut those slices into triangles and place on a baking sheet and place in the freezer while you preheat the oven to 375°F
  8. Bake cookies for about 10 minutes and let cool on the tray before removing them
  9. Enjoy!

I put about 10 in these treat bags and sent them to my husband’s work and they went fast! Everyone loved them! They’re so fun and cute and festive and honestly freaking delicious! Next time I’ll try almond extract too!
