I made tacos for NYE and made these delicious crispy taco cauliflower in place of chicken or ground turkey in our tacos!
Ingredients:
• 1 head of cauliflower
• 1/2 cup flour
• 1/2 cup cashew milk
• 1 packet taco seasoning
• 1 cup panko
• 1 red onion
Directions:
1 Preheat oven to 400 F.
2 Cut your cauliflower into small bite sized pieces and rough chop your onion.
3 Mix flour and taco seasoning together then whisk in the cashew milk. Pour that on top of your cauliflower florets.
4 Once coated, pour panko in and stir up. You may need some extra panko, depending on how big your head of cauliflower was.
5. Place your onion on the greased cookie sheet first as a bed that the cauliflower then sits on top of.
6. Bake for about 40 mins, turning halfway.
7. Enjoy with your favorite taco toppings!
I also have a recipe that uses riced cauliflower for more of a ‘ground beef’ texture. I like mine both ways but here’s that one just in case!
