Sweet & Sour Cauliflower w/ Cauliflower Rice

Cauliflower on cauliflower! It’s so cool how versatile this veggie can be! Happy New Years to trying to be healthier! It’s not perfect but it’s better than a salad, amirite?!

Ingredients:

Sweet & Sour Cauliflower

  • 1 head of cauliflower
  • Drizzle of EVOO (extra virgin olive oil)
  • Dusting of cornstarch + 1 tbsp cornstarch
  • 1/4 cup ketchup
  • 1/4 cup maple syrup
  • 1/3 cup Apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp water

Cauliflower Rice

  • 1 head of cauliflower
  • Drizzle of EVOO
  • Salt and pepper to taste

Directions:

  1. Cut 1 head of cauliflower into florets and the toss in a light drizzle of EVOO. Then toss in a light dusting of cornstarch.
  2. Bake in a 400°F oven for about 40 minutes, flipping halfway.
  3. While that’s cooking, make your sauce. In a small sauce pan, combine the ketchup, maple syrup, vinegar, soy sauce, onion powder and garlic powder. Bring until just a boil.
  4. Then add a combined slurry mixture of 1 tbsp cornstarch and 2 tbsp water. Turn down heat and let thicken for about a minute. Remove from heat.
  5. Toss the roasted cauliflower florets and sauce.
  6. For the cauliflower rice, either grate or pulse in a food processor 1 head of cauliflower. Add to a pan with a drizzle of EVOO and salt and pepper.
  7. Cook, stirring a few times for about 5 minutes until softened.
  8. Serve and enjoy!
