Cauliflower on cauliflower! It’s so cool how versatile this veggie can be! Happy New Years to trying to be healthier! It’s not perfect but it’s better than a salad, amirite?!

Ingredients:
Sweet & Sour Cauliflower
- 1 head of cauliflower
- Drizzle of EVOO (extra virgin olive oil)
- Dusting of cornstarch + 1 tbsp cornstarch
- 1/4 cup ketchup
- 1/4 cup maple syrup
- 1/3 cup Apple cider vinegar
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp water
Cauliflower Rice
- 1 head of cauliflower
- Drizzle of EVOO
- Salt and pepper to taste
Directions:
- Cut 1 head of cauliflower into florets and the toss in a light drizzle of EVOO. Then toss in a light dusting of cornstarch.
- Bake in a 400°F oven for about 40 minutes, flipping halfway.
- While that’s cooking, make your sauce. In a small sauce pan, combine the ketchup, maple syrup, vinegar, soy sauce, onion powder and garlic powder. Bring until just a boil.
- Then add a combined slurry mixture of 1 tbsp cornstarch and 2 tbsp water. Turn down heat and let thicken for about a minute. Remove from heat.
- Toss the roasted cauliflower florets and sauce.
- For the cauliflower rice, either grate or pulse in a food processor 1 head of cauliflower. Add to a pan with a drizzle of EVOO and salt and pepper.
- Cook, stirring a few times for about 5 minutes until softened.
- Serve and enjoy!
