This is an incredibly delicious and fun way of using up that extra squash from the garden!

I used yellow squash but you can certainly use zucchini instead!
Ingredients:
- 2 cups shredded squash
- 3 cups flour
- 1 tbsp baking powder
- 2 tsp baking soda
- 1 tsp each of salt, garlic powder and dried parsley
- 1/4 cup vegan butter, melted
- 3/4 cup oat milk
- 1 cup shredded vegan cheddar (I used Follow Your Heart)
Directions:
- Preheat oven to 400°F
- In a large bowl mix together the flour, baking powder, baking soda and spices
- Then add the squash and mix until coated
- Add the rest of the ingredients and mix until just incorporated
- Turn out onto a lightly floured surface and finish bringing dough together being careful not to mix too much
- Lightly press out until about an inch thick and cut into circles and place on a lightly greased cookie sheet
- Bake for 15-18 minutes
- Enjoy!
