Cheddar Bay Squash Biscuits (Vegan)

This is an incredibly delicious and fun way of using up that extra squash from the garden!

I used yellow squash but you can certainly use zucchini instead!

Ingredients:

  • 2 cups shredded squash
  • 3 cups flour
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 1 tsp each of salt, garlic powder and dried parsley
  • 1/4 cup vegan butter, melted
  • 3/4 cup oat milk
  • 1 cup shredded vegan cheddar (I used Follow Your Heart)

Directions:

  • Preheat oven to 400°F
  • In a large bowl mix together the flour, baking powder, baking soda and spices
  • Then add the squash and mix until coated
  • Add the rest of the ingredients and mix until just incorporated
  • Turn out onto a lightly floured surface and finish bringing dough together being careful not to mix too much
  • Lightly press out until about an inch thick and cut into circles and place on a lightly greased cookie sheet
  • Bake for 15-18 minutes
  • Enjoy!
