
Tomorrow is Cinco De Mayo. So. Why not?!

Ingredients:
- 1/2 cup vegan Mayo
- 1/2 cup vegan sour cream
- 1 lime (zest and juice)
- 1/4 tsp each of salt, chipotle powder and garlic powder
- A little cilantro if you’re interested in it
- 1 cup cornmeal
- 3/4 cup flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp each of salt, pepper, garlic powder, onion powder, paprika
- 1 and 1/4 cup oat milk
- Vegan hot dogs
- Vegan Parmesan and canned mexicorn to add on top
Directions:
- Start preheating a pot or pan of oil on the stove and skewer your hot dogs
- In a small bowl, together the first 5 ingredients, cover and keep in the fridge until serving
- In a larger bowl, mix together the next 5 ingredients and then add the oat milk and mix
- Add the batter to a large cup and dip your hot dogs one at a time and place in the preheated oil to fry
- Garnish with the Elote sauce, extra cilantro, parm and corn
- Enjoy!
