We had pumpkin pasta….now we have pumpkin pizza!

The warmth of fall doesn’t always have to be sweet!

Ingredients:
- 2 pizza doughs, prepared
- 1 onion, chopped
- 15 oz can pumpkin purée
- 2 tbsp oat milk
- 1/2 tsp each salt, pepper, fresh thyme, sugar
- 1/2 cup vegan Parmesan
- 2 tbsp minced garlic
- 1 shallot, diced
- Baby spinach
- Vegan Mozz
Directions:
- Prepare pizza dough (I just use Walmart frozen dough and sit it out the night before to thaw and rise, but you can use the stuff in tubes, homemade, whatever you like)
- Preheat oven to 450°F
- In a pan on the stove, start to caramelize your onion with a little oil. I didn’t do a full caramelization cuz I’m lazy and didn’t want to take the time, just some color on them and soften them up a bit
- Then add the oat milk (or any unsweetened nondairy milk), you can use a little more if you want a thinner sauce
- Add spices/sugar and mix, add the parm and garlic, mix
- Remove from heat, add shallot, mix and spread on your prepared dough
- Top with some baby spinach and vegan mozzarella
- Bake for about 15 minutes or until cheez is melted and dough is cooked
- Enjoy!
