Air Fried Oyster Mushroom Po Boy

I decided to play around with the air fryer again today! Be sure to watch my video of making the recipes, getting some of the ingredients and taste testing Morningstar’s Incogmeato Chik’n & Waffles Sandwich too!

Ingredients:

Air Fried Oyster Mushrooms

  • Oyster mushrooms
  • 1 cup + 1/2 cup chickpea flour
  • 1 tsp + 1/2 tsp each black pepper, paprika, garlic powder and onion powder
  • 3/4 cup water
  • 1 cup crispy rice cereal

Malt Vinegar Aioli

  • 1/2 cup mayo of your choosing
  • 2 tbsp malt vinegar
  • 1/2 tbsp Dijon
  • 1/4 tsp garlic powder

*Sub rolls and any other toppings

Directions:

  1. Mix together the malt vinegar aioli ingredients and pop in the fridge to marry and chill
  2. Clean and dry oyster mushrooms
  3. Mix 1 cup of the chickpea flour and 1 tsp of the spices
  4. In a separate bowl, mix together the 1/2 cup of chickpea flour and 1/2 tsp of the spices. Then add the water to make a thin batter
  5. In the other larger bowl, lightly coat the mushrooms and then add the crispy rice cereal to the remaining spiced flour mixture and crunch just a few times
  6. Dip mushrooms in batter and then pat on the crispy rice flour mixture
  7. Spray the air fryer basket, place your mushrooms in a thin layer (I had to do 2 batches), spray with more pam on top and air fry on 360°F for 10-15 minutes, flipping halfway
  8. Make your sandwich and enjoy!
