KFC Famous Bowls

I wanted to try Wegman’s Don’t Be a Chicken vegan chicken replacement. So I decided to air fry it up and use it in KFC Famous Bowls for dinner!

Ingredients:

Mashed Potatoes

  • 2 1/2 lbs russet potatoes
  • 2 cups vegetable stock
  • 2oz cream cheese of your choosing
  • 1/4 cup butter of your choosing
  • 1/4-1/2 cup milk of your choosing
  • Garlic powder, onion powder and black pepper to taste

Gravy

  • 1/4 cup butter of your choosing
  • 1/4 cup flour
  • 2 cups vegetable stock
  • Garlic powder, onion powder and black pepper to taste

Vegan Air Fried Chicken

  • 1 pkg vegan chicken
  • 1 + 1/2 cups chickpea flour
  • 1 + 1/2 tsp garlic powder, onion powder, paprika, black pepper
  • 3/4 cup water
  • 1 cup crispy rice cereal

Additions

  • Corn
  • Shredded cheese

Directions:

Mashed Potatoes

  1. Peel and cube potatoes and put in a large pot
  2. Pour in the vegetable stock and then add water until it’s about an inch or so over the potatoes
  3. Bring to a boil until fork tender
  4. Drain and add the rest of the mashed potato ingredients and beat with a hand mixer for no longer than 20 seconds, finish by hand or they will end up gummy

Gravy

  1. In a sauce pan, heat the butter on low
  2. Once melted, add the flour and whisk for about 1 minute, that is your roux
  3. Slowly add the vegetable stock while whisking to avoid lumps
  4. Bring to a boil and turn down to a simmer until desired thickness and add seasonings (remember it will thicken just a bit upon standing)

Air Fried Vegan Chicken

  1. Defrost chickens and cut into smaller pieces (I ended up with about 8 per chicken)
  2. In shallow dish, add 1 cup chickpea flour and 1 tsp of all of the seasonings and mix
  3. Toss chicken pieces in mixture and set aside
  4. Add crisp rice cereal to mixture and lightly crunch with your hand a couple times and mix
  5. In a bowl, mix together 1/2 cup chickpea flour and 1/2 tsp of all of the seasonings
  6. Add the water and mix
  7. Dip each piece of chicken in the batter and then the cereal mixture
  8. Pamela the bottom of the air fryer and arrange in a single layer, then spray with a little more Pamela
  9. Air fry for 12-15 minutes on 375°, flipping half way

Assemble bowls and enjoy!
