
I wanted to try Wegman’s Don’t Be a Chicken vegan chicken replacement. So I decided to air fry it up and use it in KFC Famous Bowls for dinner!

Ingredients:
Mashed Potatoes
- 2 1/2 lbs russet potatoes
- 2 cups vegetable stock
- 2oz cream cheese of your choosing
- 1/4 cup butter of your choosing
- 1/4-1/2 cup milk of your choosing
- Garlic powder, onion powder and black pepper to taste
Gravy
- 1/4 cup butter of your choosing
- 1/4 cup flour
- 2 cups vegetable stock
- Garlic powder, onion powder and black pepper to taste
Vegan Air Fried Chicken
- 1 pkg vegan chicken
- 1 + 1/2 cups chickpea flour
- 1 + 1/2 tsp garlic powder, onion powder, paprika, black pepper
- 3/4 cup water
- 1 cup crispy rice cereal
Additions
- Corn
- Shredded cheese
Directions:
Mashed Potatoes
- Peel and cube potatoes and put in a large pot
- Pour in the vegetable stock and then add water until it’s about an inch or so over the potatoes
- Bring to a boil until fork tender
- Drain and add the rest of the mashed potato ingredients and beat with a hand mixer for no longer than 20 seconds, finish by hand or they will end up gummy
Gravy
- In a sauce pan, heat the butter on low
- Once melted, add the flour and whisk for about 1 minute, that is your roux
- Slowly add the vegetable stock while whisking to avoid lumps
- Bring to a boil and turn down to a simmer until desired thickness and add seasonings (remember it will thicken just a bit upon standing)
Air Fried Vegan Chicken
- Defrost chickens and cut into smaller pieces (I ended up with about 8 per chicken)
- In shallow dish, add 1 cup chickpea flour and 1 tsp of all of the seasonings and mix
- Toss chicken pieces in mixture and set aside
- Add crisp rice cereal to mixture and lightly crunch with your hand a couple times and mix
- In a bowl, mix together 1/2 cup chickpea flour and 1/2 tsp of all of the seasonings
- Add the water and mix
- Dip each piece of chicken in the batter and then the cereal mixture
- Pamela the bottom of the air fryer and arrange in a single layer, then spray with a little more Pamela
- Air fry for 12-15 minutes on 375°, flipping half way
Assemble bowls and enjoy!
