Mashed Potato Tacos in the Air Fryer

My BFF Terrisa told me about these mashed potato tacos she made and since we had leftover mashed potatoes from the KFC Famous Bowls we made, this was the perfect day!

I also made a quick homemade salsa and guac!

This is just a rough written recipe, it’s kind of a ‘throw whatever you have on hand together and taste until it’s delish’ kind of dish

Salsa

Put a piece of parchment on a baking sheet and put some tomatoes, onion, pepper and jalapeño on there. Spray with a little Pamela and broil until you get a little char and take out and cool. Then blitz a few times in a blender or food processor with some lime juice and black pepper. Store in the fridge to get cool and to marry the flavors!

Guacamole

Mash 3 avocados in a bowl and mix in lots of lime juice and some black pepper and garlic powder. Fridge.

Tacos

Add some chili powder, cumin, paprika, red pepper chili flakes (and garlic powder, onion powder and black pepper too if it’s not already in your potatoes) into your mashed potatoes. Add some diced onion and green pepper and some cheese of your choosing. Warm up some corn tortillas so they’re more pliable and then schmear the potato mixture in half and fold over. Spray with some Pamela on both sides and Air fry on 400°F for about 12 minutes.
