
Irish Boxty or Potato Pancakes or Potato Cake…whatever you call them, they are delicious!

I thought perhaps for St. Patrick’s Day, this would be a delicious savory treat! What’s even better is I went ahead and made them Gluten Free and Low Sodium too!

My secret weapon, of course, is my favorite Vital 7 Organic Mushroom Powder by Ellie’s Best on Amazon! It brings so much umami flavor and extra nutrients too! Highly recommend!

I also used Ellie’s Best Nut Milk Bag from Amazon to squeeze out the extra moisture from the shredded potatoes.

It’s so handy to use the drawstring. I’ve been using these for years for my nut milks, cold brew, juicing, squeezing moisture out of veg for recipes…it’s my fave!

I mean, come on! Look at that extra liquid we’re going to toss!

Oh and this Rotary Cheese Grater from Amazon has saved my life and my arthritis! I’ve been using it for a couple weeks now and it’s done the job for everything I’ve tried. I even did carrots the other day for an Easter Spring recipe coming soon!

Ok back to St. Patrick’s Day. My bad y’all, I have ADHD and I get excited!

You can use regular flour but Bob’s Red Mill is that queen for gluten free baking/cooking! You can get this pretty much any grocery store, even Walmart.

Ingredients:
- 1 onion, diced
- 1 cup leftover mashed potatoes
- 1 lb russet potatoes
- 2 tbsp unsalted butter
- 2 tbsp plain non fat Greek yogurt
- 1/2 tsp each garlic powder, onion powder, black pepper and organic mushroom powder
- 1 1/2 cups grated raw potatoes
- 1 cup 1-to-1 GF Flour (Bob’s Red Mill)
- 1 tbsp dried parsley flakes
- 1/2 tsp each garlic powder, onion powder, black pepper and organic mushroom powder
- 1/2 cup shredded cheese (I did a mixture of extra sharp cheddar and pepper jack)
- 1 egg
- 2 tbsp milk
Directions:
- Sauté onion in a cast iron pan
- If you don’t have leftover mashed potatoes of your own and are making my flavorful low sodium version, you can start that now by peeling, cubing and boiling the potatoes in a pot until fork tender, about 20 minutes
- While those potatoes are boiling, you can go ahead and peel and grate the other raw potatoes and squeeze out any extra moisture
- Toss those raw grated potatoes with the flour, seasonings and cheese
- Once your mashed potato potatoes are fork tender, drain them and then use a hand mixer or hand masher from Amazon. I add the rest of the mashed potato ingredients before mashing to save time because too much mixing with a hand mixer will make gummy mashed potatoes and ain’t nobody got time for that
- Add 1 cup of those mashed potatoes to your raw grated potato flour mixture. It should be all of the mashed potatoes but if you have extra, eat them because you need a snack, you’re working so hard cooking this lovely meal!
- Whisk the egg and milk together and add that to your big bowl of potatoes on potatoes and mix together
- Form into balls and then flatten out onto some parchment paper so that there all ready to go for cooking
- Fry in batches in the same pan as the onions with some unsalted butter because it’s St. Patrick’s Day and we’re celebrating baby!
- I garnished mine with green onion and served with plain nonfat Greek yogurt for dipping and extra veg for balance
- Enjoy!

These potato pancakes, or Irish Boxty, were a huge hit with my husband! I’m excited to use this potato pancakes recipe with my inevitable leftover mashed potatoes for thanksgiving. Or actually, Easter will probably have some leftover mashed potatoes too! POTATOES!
