
I know I am late to the party but I have seen the viral TikTok feta and tomato pasta recipe everywhere. Now that we eat dairy, I knew it was time to try it. I wanted to make it healthier and reduced sodium, so I switched it up with a few ingredients. I did not realize that this particular feta from president had to much sodium! I ended up finding a greek feta made by Greco that I got from Walmart that has a fraction of the sodium. Moral of the story, is not all feta is made the same so check the back if you are sticking to a low sodium diet. Oh and it’s gluten free too!

Now let’s talk about how to cut a spaghetti squash. I have literally made spaghetti squash so many times and it wasn’t until fairly recently that I put my thinking cap on and realized that it’s a gourd with seeds, similar to a pumpkin. Then I whipped out my halloween box and my pumpkin carving kit and attempted what seemed to be too good to be true. Y’all! It was true! Using those tiny little pumpkin carving knives to cut a spaghetti squash is by far the easiest and BEST way to cut a spaghetti squash!

Then you just scoop out the insides of the spaghetti squash like you would a pumpkin. Congratulations! You have successfully cut and cleaned a spaghetti squash the easiest way possible! The Gold cutlery is from Amazon.

Since I did a no salt added, reduced sodium viral TikTok recipe, I used one of my secret weapons, Ellie’s Best Vital 7 Organic Mushroom Extract Powder from Amazon. I randomly had made cheddar bay sausage balls for something else on the same day I made the feta tomato pasta recipe so I ended up serving it with those. I wanted to see is the cheddar bay sausage balls would work just as well using a plant based meat replacement. I used Impossible’s ground sausage and they ended up just as delicious as the original recipe I made so that’s exciting for the vegetarians of the group!

I am making the spaghetti squash feta tomato pasta recipe again today actually. I have some leftover grilled harissa chicken from another recipe I will be working on later this week, so that is what we will eat this feta tomato spaghetti squash with for dinner later. All of that to say, this is a versatile recipe for adding whatever protein your heart desires!
Ingredients:
- Spaghetti Squash
- 1/2 red onion, chopped
- 1/2 green pepper, chopped
- 10 oz pkg grape tomatoes
- 1 block feta cheese
- 2 tbsp jarlic (minced garlic from a jar)
- 1/2 tsp each mushroom powder, garlic powder, onion powder, black pepper, paprika and red pepper chili flakes
- drizzle of olive oil
- fresh basil garnish
Directions:
- Preheat oven to 420 degrees Fahrenheit
- Cut spaghetti squash in half, length wise, and place in a baking dish, cut side facing up
- Sprinkle both halves with seasonings and a drizzle of olive oil, then add the onion and tomatoes
- Split feta cheese block in half and place each half in the each spaghetti squash half, then over with jarlic and grape tomatoes and drizzle a little more olive oil
- Bake about 50 minutes or until done, it’ll be easy to tell based on how easy it is to ‘shred’ your spaghetti squash into pasta strands. If you can’t easily do it, it isn’t ready, throw that baby back in the oven
- Use a fork to scrap the sides and bottom of the spaghetti squash to make pasta and mix all of the ingredients together. There will be some extra liquid from the vegetables, but that’s ok, it will get mixed in and soaked up, kind of like how you add pasta water to your pasta dish
- Enjoy!
