It’s a long story but my brother deemed these classic family finger sandwiches ‘Lil Dickies’, so that is what they’re called. They’re easy to throw together and make ahead for a party snack!

Start by laying out 6 dill pickle spears on some paper towels to get rid of some of the liquid while you prepare the rest of the ingredients. Pink Ghost Plates are from Amazon. Same with the Pink cutting board.

I use this Italian bread because it’s the perfect size and it comes in a 2 pack.

Slice it.

And then scoop at the middle. No we are not watching our carbs, we just need a pocket for our pickles.

Then add about 3 tbsp diced pimentos to an 8oz block of softened cream cheese. Gold espresso spoons are from Amazon.

You can use any Italian dressing you want but I love this one just in general because it’s one of the ones with the least amount sodium, which we will need any help we can get with the pickles and the ham for our sandwiches.

About 2 tbsp will do ya.

Then you’re going to use the back of your spoon to schmear the cream cheese mixture in your bread crevice. I love these Gold spoons from Amazon. They’re very circular shaped. Great for my neurodivergent brain.

Add some shredded cheese. Here I used cheddar but any kind will do.

Just make sure you kind of smoosh it into the cream cheese part so it sticks to it well. This is why I love these Disposable gloves from Amazon so much!

Then just start wrapping your pickles. Any ham, any amount. I find that Black Forest ham is my fave for this recipe and about 3 pieces per pickle work well.

Shove your pickles in the crevices.

And then fold over your bread.

Wrap your sandwiches in cling wrap tightly. This kind of makes it more cohesive while it’s chillin.

Slice your lil dickies sandwiches before serving. I would let them chill in the fridge for at least an hour but I’ve done overnight for a party the next day. They hold together well which is nice for a make ahead party appetizer/snack.

We love these for all of the things! We recently made them for a Big Brother Finale Watch Party and they were a big hit!

But usually when I’m asked to bring football snacks to a party, you better believe Lil Dickies Sandwiches are on the menu!
