Easy 3-Ingredient Nut Butter Blossom Cookies | Christmas Cookie Recipe (Gluten Free)

I love peanut butter blossom cookies for Christmas. So I decided to try Amanda Rose’s easy nut butter cookies from Instagram.

They’re just 3 ingredients, egg free, gluten free, peanut free, and dairy free (if you omit the Hershey’s kisses or substitute with dairy free Christmas chocolates like I make for my Vegan & Gluten Free Peanut Butter Blossoms

They are a more traditional peanut butter blossom texture.

I also have a Sugar free Gluten free peanut butter blossom recipe too that is a huge crowd favorite for Christmas!

These are more dense and nutty, like super nutty and I love the texture! They remind me of this almond butter I used to get at an Amish market in Pennsylvania and I’ve never found that texture anywhere else than in these delicious nut butter cookies!

I used mostly target products for these Christmas cookies because they’re cheaper and easy access to me.

You can use any nut butter for this but just keep in mind the viscosity of your peanut butter. This nut butter is fairly thin so I needed more almond flour than if you use one that is thicker.

I used this maple syrup but any brand will do, just make sure it’s pure maple syrup.

Mix these 3 nut butter cookie ingredients together and that’s it! You’ll know if you need more almond flour based off of if the cookie dough sticks to your hands when you try and roll them.

Scoop your nut butter cookie dough on to a cookie sheet, leaving a little space between each Christmas cookies.

Then roll each cookie dough into a ball. Either use clean hands or disposable gloves, especially if you’re giving these gluten free nut butter blossom cookies away to friends and family for the holiday.

Give your gluten free Christmas cookies a little smoosh with a gold fork before baking.

While they’re baking, unwrap your kisses if you are using them. I just had them around anyways for the holidays and decided to add them to these nut butter cookies for extra Christmas fun. I’m going to make them again without though, the whole year round because I love the texture!

Ingredients:

  • 2 1/4-2 1/2 cups almond flour
  • 2 cup cashew butter
  • 2/3 cup maple syrup
  • Chocolate candy kisses (optional)

Directions:

  1. Preheat oven to 350°F
  2. Mix ingredients together (minus the chocolate if you’re adding them on top)
  3. Scoop cookie dough on parchment paper lined cookie sheets, give them a roll and a smoosh with a fork, then bake 12-14 minutes
  4. As soon as they come out of the oven, add the chocolate candies so they can melt just a little and adhere to the Christmas cookies.
  5. Don’t remove cookies from the baking sheet until cooled and don’t package them until the chocolate re-hardens
  6. Enjoy warm or cooled!

Flame less tea light candles give such an easy and cheap vibe for Christmas.
