The BEST Air Fryer Potatoes Recipe (Low Sodium)

My favorite way to have air fryer potatoes is with both russet potatoes and sweet potatoes. I’m going to teach you the trick to making super crispy air fryer potatoes with a fluffy inside!

I don’t peel the whole potatoes but I do take some potato skin off so that there are more edges without potato skin but that’s just preference, you can certainly peel the whole potatoes. Also, the products I use in this recipe are all from Amazon.

The trick to the perfect potato in general but in this case, the air fryer sweet potato medley is to par boil your potatoes. I love this white mini Dutch oven pot when I’m making dinner for just my husband and I because it’s nice and petite, but also works on my pink induction burner. It’s perfect for our little studio/mother in law suite space we currently live in because it uses magnets to heat the pot and makes it much safer.

That’s why the white enamel Dutch oven pot works best because it’s cast iron. And then I use these wooden utensils to not scratch the enamel.

You don’t want your potatoes completely cooked through but at least half way. Then after you drain your potatoes in a mesh strainer, run some cold water over the potatoes to stop them from cooking.

Then add your potatoes and sweet potatoes to a metal bowl.

I use a measuring spoon for my oil these days because I’m tracking my calories and this air fryer potato recipe really fits in my calorie deficit. I’ll share some of my favorite dinners I’ve had these air fryer potatoes with at the end after the recipe.

Ingredients:

  • 1 large russet potatoe
  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1 tbsp corn starch
  • 1/4 cup grated Parmesan
  • 1 tsp each chili powder, garlic powder, onion powder, black pepper and mushroom powder

Directions:

  1. Cube potatoes, add to a pot with water then bring to a boil. Par boil your potatoes for about 8 minutes
  2. Drain potatoes and rinse with cold water
  3. Toss potatoes with oil, then add the rest of the ingredients and toss
  4. Air fry your potatoes on 400°F for about 20 minutes, tossing half way
  5. Enjoy!

The crispiest and fluffiest air fryer potatoes and sweet potatoes!

We love these air fryer potatoes with so many meals, here we have our favorite tuna salad sandwich on keto bread.

Or some grilled chicken marinated in Italian dressing, so delicious!

They went so well with some three bean chili too! I blended some cottage cheese, plain non fat Greek yogurt and spices together to put on top.

Oh and this carb control tortilla from Aldi with some chicken Caesar salad made a lovely addition to the air fryer potatoes.
