I got another huge amount of cucumbers from my friends garden and had leftover strawberries from my strawberry walnut vegan ice cream recipe so I went with another cool and refreshing summer treat!

- 1 cucumber, peeled and seeded
- 1 lb strawberries
- 1 lime, zested and juiced
- 1 tbsp maple syrup
- Blend everything together until as smooth as your blender will get it.
- Pour into popsicle molds and freeze for at least 4 hours.
