Southern Tomato Pie (Vegan)

Y’all weren’t kidding about how delicious tomato pie can be! I can’t believe I’ve never had it until now! New obsession for this tomato lover!

Pie Crust:

  • 2 cups what flour (or all purpose flour)
  • 1/2 tsp salt
  • 1/2 cup vegan butter
  • 1/4-1/2 cup water

Tomato Pie:

  • 1 onion, chopped
  • 5 tomatoes, sliced
  • 1/4-1/2 cup chopped fresh basil
  • 1 cup shredded vegan mozz
  • 1 cup shredded vegan cheddar
  • 3/4 cup vegan mayo
  • 1/2-1 tsp garlic powder
  • Salt and pepper


  • In a food processor or blender, blitz together the flour, salt and vegan butter, then slowly drizzle in some water 1 tbsp at a time until the dough comes together
  • Roll out the dough and place in pie dish
  • Cover and refrigerate for at least 30 minutes
  • Caramelize onions on the stove
  • Lay out the tomato slices on paper towels and sprinkle with salt to help draw out extra moisture and then pat with more paper towels after about 15 minutes
  • Mix together the shredded mozz, shredded cheddar, mayo and garlic powder
  • Par bake the pie crust on 375°F for about 10 minutes. Once the crust comes out of the oven, turn the temperature down to 350°F
  • Layer half the tomatoes on the bottom of the crust, then add some black pepper, half the basil and half the onion, add the rest of the tomatoes, then the rest of the basil and onion
  • Cover with the cheesy mayo mixture and spread it out
  • Bake for 30 minutes
  • Cool before slicing and enjoy!
