A little extra pitaya powder pink to make it special!

Ingredients:
- 2 cups flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup + 2 tbsp vegetable oil
- 1 tsp vanilla extract
- Juice of one lime
- 1 1/2 cup oat milk
- Can of sweetened condensed coconut milk + 1 cup oat milk + pitaya powder
- Coconut whipped cream
Directions:
- In a large bowl, mix together the flour, sugar, baking soda and salt
- Make 3 wells and fill one with lime juice, one with vegetable oil and one with vanilla extract
- Pour over the oat milk and stir
- Pour into a 13×9 and bake on 350°F for 30 mins
- Once cooled, mix together the condensed milk and oat milk and pitaya powder and pour over the cake after poking with holes
- Once it’s all soaked in, cover the top with the coconut whipped cream and enjoy!
