Tres Leches Cake (Vegan)

A little extra pitaya powder pink to make it special!

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup + 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • Juice of one lime
  • 1 1/2 cup oat milk
  • Can of sweetened condensed coconut milk + 1 cup oat milk + pitaya powder
  • Coconut whipped cream


  • In a large bowl, mix together the flour, sugar, baking soda and salt
  • Make 3 wells and fill one with lime juice, one with vegetable oil and one with vanilla extract
  • Pour over the oat milk and stir
  • Pour into a 13×9 and bake on 350°F for 30 mins
  • Once cooled, mix together the condensed milk and oat milk and pitaya powder and pour over the cake after poking with holes
  • Once it’s all soaked in, cover the top with the coconut whipped cream and enjoy!
