Jalapeño Popper Pasta Salad (Vegan)

The title says it all.

Ingredients:

  • Box of Penne noodles
  • 1/3 cup chopped pickled jalapeños
  • 1/4 cup bac’n bits
  • 8oz container vegan cream cheese (I prefer wayfare)
  • 1 cup vegan mayo (I used Hellman’s)*
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 2 tbsp dried chives

Directions:

  • Cook noodles according to package
  • While noodles are cooking, mix the rest of the ingredients in a large bowl
  • Once you drain the noodles, rinse them in cold water to stop them from cooking and to cool them down
  • Add noodles to the bowl and stir until combined
  • Let chill in fridge for at least a few hours

*After the pasta salad is chilled, you’ll probably have to add more vegan mayo until you get your preferred pasta salad consistency because the noodles will soak a lot of it up. Don’t be scared to add more seasonings or jalapeños to your level of spicy and flavor if needed
