Loaded Santa Cookies (Vegan, GF)

Santa has a long night ahead of him, so we gotta fuel him up with some loaded cookies!

We left him some vegan nog too! Hopefully he will still leave us a present and not coal even though we only had Califa Farms almond milk nog and it’s just not as good as others

Ingredients:

  • 1/2 tbsp ground flax seed + 2 1/2 tbsp warm water
  • 3/4 cup + 2 tbsp gluten free baking flour (I used bobs red mill 1-to-1)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan butter
  • 1/2 cup natural peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup each of your mix ins of choice(I used enjoy life dark chocolate chips, glutino pretzels crushed up, roasted pepitas and candy chips)

Directions:

  1. Preheat oven to 325°F
  2. Mix together the flax seed and water, then set aside to become gelatinous
  3. Mix together flour, baking soda and salt, then set aside
  4. In a large mixing bowl, beat together the vegan butter, peanut butter, sugar, brown sugar and vanilla extract until well combined using a hand mixer
  5. Add gelatinous flax mixture and mix
  6. Add half of the flour at a time a mix until just incorporated
  7. Stir in your mixins and roll into balls on an ungreased baking sheet and press down with a fork criss cross like a regular pb cookie
  8. Bake for 12-14 minutes, let sit on the pan for just a minute and then remove onto a cooling rack or parchment paper
  9. Enjoy!
