
KFC came back out with their $5 Mac & Cheese Bowls the day I decided to make a Buffalo Cauliflower Wing Mac & Cheese Recipe. It was meant to be!

I may be biased but mines totally better! I made an easy no boil baked Mac and cheese because it’s a Monday! It takes like an hour in the oven buuut you just throw it together and don’t have to stand at the stove. Perfect time to get the laundry folded from the weekend too cuz let’s be honest, time ran out.
You can use the vegan replacements for the dairy and cheeses for the Mac and cheese. I used my Ellie’s Best Nut Milk Bag to make the cheap and easy nondairy milk I used. Oh and you can certainly switch up which flavors of cheeses you use and how much. I like this recipe because I use it when I have the random little bits of different leftover cheeses in the fridge and just throw them all together.

Ingredients:
Buffalo Cauliflower
- Head of Cauliflower (chopped into florets)
- 1/2 cup flour
- 1/2 cup milk
- Garlic powder, onion powder, black pepper
- Panko
- Buffalo sauce
No Boil Baked Mac & Cheese
- 2 cups uncooked elbow noodles
- 3 1/2 cups milk
- 8oz shredded cheddar
- 8oz shredded pepperjack
- Garlic powder, onion powder, black pepper
- 1 tbsp Dijon mustard (optional)
Directions:
Buffalo Cauliflower
- Preheat oven to 400°F
- Mix together the flour, seasonings and milk
- Pour over cauliflower florets and mix until coated
- Toss in some panko and gently toss until the florets look coated (be sure not to mix too much or it’ll all start falling off)
- Pour bowl out on a greased baking sheet and make sure they’re in a single layer, then bake for 40 minutes, flipping them halfway
- Once they come out of the oven, let them cook a minute and then put them in a bowl and pour over Buffalo sauce
- Gently toss and then put back on the baking sheet and back into the oven on broil just to crisp them back up (always watch your food on broil, it can burn in a second)
Mac & Cheese
- Preheat oven to 400°F
- Mix all the ingredients together in a 8.5×11 pan
- Cover with aluminum foil and bake for about 30 minutes
- Take it out and stir it, keep the cover off and bake for another 25 or until noods are tender and mixture is thicker not liquidy
Put cauliflower on Mac and cheese, drizzle with ranch and enjoy!
