
I happened upon Preppy Kitchen’s Red Velvet Cake Recipe and wanted to give it a try.

I had tried another red velvet cake recipe a few weeks ago that was just alright. Since the next few weeks there are a lot of family birthdays, what better time to try and find a delicious red velvet cake recipe?!

This one is up there with great recipes. I wish I had of let my butter come to more room temperature than I did for mixing the cake but it still turned out pretty great, I’d say!

Ingredients:
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1-1 1/2 tsp red food coloring gel
- 1 tbsp white vinegar
- 1 cup buttermilk
- 4 sticks butter
- 1 1/2 cups granulated sugar
- 2 tsp vanilla extract
- 2 tbsp cocoa powder
- 2 eggs
- 1-1 1/2cup chocolate chips
- 2 blocks cream cheese (16oz total)
- 5 1/2 cups powdered sugar
Directions:
- Preheat oven to 375°F
- Butter and flour two 9” cake pans, set aside
- In a medium bowl, mix together the flour, baking soda and salt then set aside
- In a smaller bowl, mix together the food coloring, vinegar and buttermilk then set aside
- In a stand mixer, with the paddle attachment, beat one stick of the butter and granulated sugar together
- Then add the eggs, one at a time
- Add 1 tsp vanilla then the cocoa powder
- Add half of the flour mixture then half of the buttermilk mixture
- Add the chocolate chips to the rest of the flour and mix in that bowl and then add to the stand mixer
- Add the rest of the buttermilk
- Divide equally in the pans and bake for about 30 minutes
- Let them cool in the pans for a few minutes and then turn out onto a cooking rack and let cool completely before icing
- When it’s time to decorate, beat together the cream cheese and remaining three sticks of butter in the stand mixer with a paddle attachment
- Then add the remaining 1 tsp vanilla extract
- Now slowly add the powdered sugar until it’s all incorporated
- Build your cake however your little heart desires, you’re just gonna eat it anyways
- Let it set in the fridge for about an hour and then serve room temp for best deliciousness in your mouth hole
