
I had leftover crockpot chili so I used it to easy make these stuffed peppers! I swear I make that chili nearly every weekend but I’m not mad about it cuz it’s such a great thing to pull out and add to multiple dishes for the weeknights. It’s like my way of meal prepping 🤪
You can certainly use anything your heart desires, just make sure you overstuff your peppers cuz it’s fun and yummy!
Ingredients:
- 1 cup uncooked rice
- 2 cups low sodium vegetable broth
- 4-6 peppers, halved and deseeded
- 2-3 cups chili
- Shredded cheese
Directions:
- Add rice and veggie broth into a pot with a lid and bring to a boil, then simmer for about 18 minutes, let sit for 10 then fluff with a fork
- Add the chili and a handful of shredded cheese and mix
- Fill the halved peppers that are arranged in a 13×9 and sprinkle with more cheese
- Cover with aluminum foil and bake in a preheated 375°F oven for about 30 minutes
- Enjoy!
