Pumpkin Pie Rice Krispie Treats for an Easy & Fun Thanksgiving Dessert Idea

Apparently not everyone likes pumpkin pie.

Despite that not being the case for me personally, I love a crispy rice cereal treat so much so I’m not even mad about it!

It’s great for the kiddos and is just so super cute and fun to have on the dessert table!

I did a cream cheese frosting on top cuz I’m obsessed but if you’re going for an even easier version, you can just use like whipped cream in a can for that part!

Ingredients:

Rice Krispie Treat Pie

  • 1/4 cup unsalted butter
  • 10oz bag marshmallows
  • 7 cups crispy rice cereal
  • 1/2 tsp vanilla extract
  • 1/2 tsp orange food coloring
  • 1/4 tsp each pumpkin pie spice and cinnamon

Cream Cheese Frosting

  • 1/4 cup unsalted butter, softened
  • 4oz cream cheese, softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp heavy cream

Directions:

  1. Grease a 9” spring form pan and set aside
  2. In a large pot on the stove, melt 1 1/2 tbsp butter and then add 16-18 marshmallows, stir until melted
  3. Add vanilla extract and stir, then add 3 cups crispy rice cereal and mix
  4. Pour into pan and form into a thick crust about an inch around and set aside
  5. In a large pot on the stove, melt 2 1/2 tbsp butter and then add pumpkin pie spice and cinnamon and stir
  6. Add 26-28 marshmallows, stir until melted (not all bags of mallows have the exact same number, but don’t stress, just get as close to the numbers and you’re golden)
  7. Add orange food coloring, stir and then add 4 cups crispy rice cereal and stir
  8. Pour into the middle of the crust you formed and smoosh down until it looks like the filling of pumpkin pie
  9. Let cool completely before removing from the pan and slicing and icing
  10. You can simply top with whipped cream in a can or you can make cream cheese frosting which is just beating the butter and cream cheese together with a hand mixer, then adding half the powdered sugar and vanilla and mixing and then the rest of the powdered sugar and heavy cream and mixing and then voila!
