The BEST Buckeyes Recipe

My bestie went to Ohio State and the OSU football team is playing today, so, in support of my BFF, I made these beautifully delicious buckeyes!

I tried making these in my teens and somehow failed miserably, so I am excited to share this simple and easy buckeyes recipe with the perfect texture and flavor! So, let’s talk peanut butter.

This is the peanut butter I used for these buckeyes. I personally eat the stir peanut butter because the ingredients are JUST

peanuts and they don’t have added salt. However, I was nervous to try it in this traditional buckeyes style recipe because of the extra oils. This no sugar added jif peanut butter had the texture I was looking for, but with the best specs, so like, no sugar added but also it had one of the least amount sodium content in that style of peanut butter.

Because you add melted butter to buckeyes, I was thinking maybe if you use stir peanut butter (or any other nut butter), you would just decrease the amount. I’m going to have to try that in the college football off season! Don’t worry, I’ll report back.

We’re still going to add sugar to this recipe, but if you were looking for a no sugar added buckeyes recipe, I would just use this zero sugar powdered sugar and then Ghirardelli has no sugar added dark chocolate chips that are pretty delicious too.

I highly recommend using a sifter (this one is from Amazon). It really gets all the clumps out of the powdered sugar which helps the texture when eating but also makes it easier to incorporate all the buckeyes ingredients.

You can use either 2 tablespoons to scoop out your peanut butter buckeye filling or a cookie scoop.

The metal bowls are part of a set of different sizes, which I love.

I use disposable gloves to help mix the peanut butter filling together, and also to roll the buckeyes into balls.

Then you’re going to want to make sure your buckeyes balls are chilled in the fridge for at least 2 hours before dipping them in chocolate.

I used this retro microwave to melt my chocolate melting wafers. The gold spoon is also part of a flatware set. I love the shape.

Then I use toothpicks in the buckeyes to dip them in chocolate part of the way, but leaving some peanut butter exposed.

Be sure to shake off the excess chocolate so you don’t have too wide of a base like these first couple buckeyes I dipped.

After you let the buckeyes chill again for another hour, you can remove the toothpicks and sort of smooth over the hole with your fingers.

Ingredients:

  • 1/2 cup creamy peanut butter
  • 1 1/2 cups sifted powdered sugar
  • 3 tbsp unsalted butter, melted
  • Chocolate for melting and dipping (I used about half a bag of ghiradelli dark chocolate flavored melting wafers)

Directions:

  1. Put peanut butter in a bowl, then sift the powdered sugar over top.
  2. Add the melted butter and mix with a spoon at first and then I would move over to a gloved hand to really get it incorporated.
  3. Roll into about 16-20 buckeye shaped balls, using a tablespoon measurement of sorts and chill for 2-3 hours.
  4. Gently insert toothpicks and dip into melted chocolate, but not all the way for the distinct buckeyes look and chill again for 1-2 hours.
  5. Remove toothpick and smooth over the hole.
  6. Enjoy!
