
Smashed potatoes are the best side dish! I’ve been playing around with some cool toppings for smashed potatoes to amp them up and make a more filling dish. I started with pimento cheese smashed potatoes. But first, we need to make the pimento cheese.

I love adding a little dash of hot sauce and some organic mushroom extract powder , just enough of each to balance out the flavors and make the best pimento cheese you’ll ever eat!

Pimento Cheese Recipe:
- 2 oz cream cheese, softened
- 1/3 cup mayo (light mayo worked too)
- 1/4 cup plain non fat Greek yogurt (or sour cream)
- 1/4 tsp each garlic powder, onion powder, white pepper, mushroom powder (you can add a dash of salt, I omitted it in this recipe)
- 1 tsp franks red hot sauce
- 4 oz jar diced pimentos, drained
- 2 cups shredded cheddar cheese (I recommend shredding it yourself)
Mix everything together and store in an air tight container in the fridge

Ok on to the potatoes:
- Add red potatoes to a large pot and fill with water. Bring to a boil and let cook for 20-25 minutes until fork tender
- Place parchment paper on a cookie sheet and spray with oil. Using the bottom of a glass, push down on each potato to smash it, but don’t push all the way down, just enough to make more surface area
- Melt butter in the microwave and add a little dried parsley, garlic powder and grated Parmesan, then brush on your smashed potatoes
- Bake in a preheated 400°F for about a half hour, flipping halfway through

Once the potatoes come out of the oven, add your pimento cheese

And put back in the oven for another 10-15 minutes until melty and gooey

You can eat these pimento cheese smashed potatoes as a side dish or as a smashed potato flight for a girl dinner vibe.
