
French onion soup is so delicious and comforting but not for summer. Smashed potatoes, on the other hand, are the perfect side dish for all of your summer dishes.

- Add red potatoes to a large pot and fill with water. Bring to a boil and let cook for 20-25 minutes until fork tender
- Place parchment paper on a cookie sheet and spray with oil. Using the bottom of a glass, push down on each potato to smash it, but don’t push all the way down, just enough to make more surface area
- Melt butter in the microwave and add a little dried parsley, garlic powder and grated Parmesan, then brush on your smashed potatoes
- Bake in a preheated 400°F for about a half hour, flipping halfway through

Once the potatoes come out of the oven, add caramelized onions and a huge pile of Gruyère cheese, I shredded it myself, it’s much better that way. I also just have caramelized onions on hand a lot because they’re so delish and I put them on sandwiches. I recommend doing the same if you’re an onion Stan like me!

Then put your French onion smashed potatoes back into the oven for another 10-15 minutes, until the cheese is melty.

I topped these French onion smashed potatoes with some green onions as a garnish.
